I predict timing chain issues, unless you installed a bigger chain. Spinning two more cams loads the chain more, so now it has 3x the load it was designed for!
It's hard to tell just from the video but it looks like the fork has too much angle compared o the steering head? As in it needs more rake in the frame. If it's too little it will make the bike unstable. Ideally the fork should fall to the side when you lean the bike but not all the way and straighten when you raise the bike again. Technically the front wheel is supposed to drag behind the fork. On a chopper that distance needs to be 2-3 times longer than on a production bike. Sort of hard to explain without drawing but very important.
