Top tip for when you fo a cake next time, grease the pan and then put some parchment paper (or grease proof paper whatever you call it) in the pan so then its easier to remove the cake and then slowly take the parchment paper off the cake to let it cool fully

olive oil in cake is fine, there's literally a cake called olive oil cake. if it says to use a type of oil then any is fine, even melted butter works!
