INGREDIENTS
1 cup of oil
4 onions sliced
4 large cubed tomatoes
7 cloves of garlic
1” inch of ginger
5 kashmiri chillies
4 green chillies (broken into 2)
2-3 finely chopped green chillies
15 cashew nuts
2-3 tbsp of oil
2-3 medium sized carrots (cubed)
1 cup of cauliflower florets
1 cup of french beans
1 cup of green peas
2 tbsp of ghee
Add 1 tsp of garlic paste to it
2 bay leaves
1” cinnamon
2 whole red chillies
2 green cardamoms
3 cloves
10 peppercorns
1 tsp of cumin seed powder
1 tbsp of coriander seed powder
1 tsp of garam masala powder
1 tsp of kasuri methi
Water
Salt to taste
1/4 cup of cream
1 tbsp of butter
1 inch of julienne ginger
1 tsp of kasuri methi
METHOD:
Heat 1/2 cup of oil
Fry 4 onions sliced till they’re golden brown in colour
Drain the oil off the birista
In the same oil, add 4 large cubed tomatoes
Cook the tomatoes for 5-6 minutes
Add 7 cloves of garlic and an inch of ginger
Add 5 kashmiri chillies
Add 4 green chillies (broken into 2)
Fry the ingredients for 2-3 minutes
After the oil separates,
Add 15 cashew nuts and fry for another 4-5 minutes
Remove it, let it cool down and grind it into a fine paste along with fried onions
In the same kadhai, heat 2-3 tbsp of oil
Add 2-3 medium sized carrots (cubed), fry it for a minute
Add 2 medium potatoes (cubed), fry for 2-3 minutes
Add 1 cup of cauliflower florets and 1 cup of french beans and 1 cup of green peas
Fry the vegetable for another 2-3 minutes
Remove the vegetables and keep them aside
Heat 2 tbsp of ghee
Add 1 tsp of garlic paste to it

1” cinnamon
2 whole red chillies
2 green cardamoms
3 cloves
10 peppercorns
Add 1 tsp of cumin seed powder
1 tbsp of coriander seed powder
1 tsp of garam masala powder
Add 1 tsp of kasuri methi
Fry this masala for a minute
Add a little water to it
Add the vegetables
Mix it well
Add the ground gravy to the vegetables
Give it a good mix
Add 1/2 litre of water to it
Stir well
Add Salt to taste
Cover and cook it on a medium to low flame for 5-7 minutes till vegetables are done
Shut the flame
Add 1/4 cup of creame
Give it a good mix
For temper/tadka
Melt 1 tbsp of butter
Add 1 inch of julienne ginger
Add 2-3 finely chopped green chillies
1 tsp of kasuri methi
Shut the flame and pour the tadka over Sabz Dewani Handi
Stir well
Remove in a serving bowl

Can it be cooked without burning the stuff - it looks jala hua. I am a fan ma’am but can these be cooked without the black and brown color
Hard to watch the recipes, too much smoke because of the utensil type. Totally respect your choice to not use non stick. But perhaps invest in a cast iron such as Le Creuset?
