A really cool tip for making paths I’ve used is to put dead coral in! Works especially well if you do it on a hill or where you only use gray blocks! I do think however that path blocks and such were the right choices in your situation

Here are some ideas of mine that might seem cool for you.
With the oak slabs; You can waterlog some and put lily pads on top of them to have a more "nature-y" type vibe, If you find the right lily pad texture pack, or keep the vanilla type style. They both look really good.
For the sides of the paths; You can add little tiny areas of rock type things with the bushes and fences.
Extra/Something to do for a different episode or longplay; You could add like a really worn out path to some type of worn out Statue/Fountain, or maybe a really destroyed and worn out Castle/Tower to make it seem like the area that you are building on had some old buildings there from a really long time ago.
