- Today I made homemade pepperoni pizza! It's fantastic!!!! 8D
ingredients (220℃ 5~10min / 2 served)
dough: 180g bread flour, 100ml warm water, 2g salt, 2g dry yeast, 15g sugar, 1Tbs oil / corn meal (*optional)
topping: 4~5Tbs pizza sauce or tomato sauce, mozzarella cheese, pepperoni, black olive

많은 분들이 궁금해 하시는데, 포크로 찌르는 이유는 구울때 기포가 올라와서 토핑과 치즈들을 망치는걸 막기위함 입니다. 대신 엣지부분은 일부러 부풀라고 찌르지 않으신거구요.
그리고 도우 피기 전에 옥수수가루 뿌리는 이유는, 도우를 피면서 바닥과 손에 달라붙는걸 막아주고, 굽기 단계에서 바닥에 달라붙지 않고 후에 접시로 옮기기 쉽게하기 위함입니다. 그렇기 때문에 아마 웬만하면 밀가루 같이 입자가 곱고 잘 녹아버리는 분말류보다는, 옥수수가루 같이 입자가 살짝 더 큰 분말류를 쓰시는게 좋을거 같습니다.
이상 피자집 알바생 이었습니답.
옥수수가루 말고 다른 분말류로는 뭐가 있나요?
Yeoul Kim 제가 일하는 곳 같은 경우는 듀럼 밀을 사용하고 있습니다. 그런데 피자 전문점 같이 손으로 피는 경우에는 바닥을 향해서 압력이 많이 가해져서 쉽게 붙는 경우가 있어서 약간은 굵은 종류를 쓰는게 좋을거 같긴한데, 집에서 밀대 같은거로 밀어서 도우를 살살 피는 경우에는 일반 밀가루를 쓰셔도 크게 무방할거 같습니다. 다른 도우 피는 동영상을 보니 보통 밀가루를 쓰는 경우도 있는거 같습니다.

honeykki! i just made this pizza for my family breakfast! i use what i have in my fridge which is some instant bolognaise sauce for pasta and some slices cheese. it was sooo good....my family love it! simple fast and easy! and delicious for sure! thankyou for sharing this recipe! it's so helpfull!❤

직접 만들어봤는데 엄마랑 아빠가 되게 좋아했어요. 제가 처음이라 도우가 약간 두껍게 되긴 했지만.
팁을 좀 드리자면 이스트는 무조건 인스턴트 이스트란 걸 써야 합니다. 생 이스트는 따로 공정을 거쳐야 하는데 똥손은 그런 거 못해요...그냥 없으면 인터넷으로 주문이라도 하세요.
그리고 전 이게 아무리 봐도 물이 좀 부족해서 조금씩 물을 더 넣어서 만들었어요. 그리고 나서 반죽하다가 진짜 팔뚝이 아작나는 줄 알았어요. 만들기 전에 헬스를 충분히 합시다.
2차 발효 이후 완성된 반죽은 냉장고에 집어넣거나 얼리면 돼요. 대신 도우를 밀어서 토핑 올리기 전에는 충분히 해동시켜서 따뜻하게 해야 합니다. 아니면 이게 뚝뚝 끊어지고 난리나요.
피자는 생각보다 빨리 익어요. 자주 체크해주세요.

예전부터 궁금한게 있었는데.. 강력분에다가 구덩이를 파고 이스트와 소금을 넣고 강력분과 섞은다음에 섞는 이유가 뭔가요? 이스트와 소금을 강력분에다가 그냥 섞으면 안돼나요?
분홍이 이스트랑 소금이 닿으면 효소성분이 파괴되어서 잘 부풀지 않는 걸로 알고있어요
분홍이 이스트가 민감한 재료라서 직접적으로 다른재료와 섞이면 물(?) 이생기는거루 알구있어요 :)
소금과 이스트가 닿으면 발효가 잘 안돼요! 그래서 구덩이를 파서 이스트에 밀가루 입자가 먼저 닿게하기 위함입니다!
