So finally the recipe is live and I am just waiting for you guys to watch the video and try this recipe at home. I have prepped some Kaala Mutton Masala, some kaala mutton rassa, Aalni soup & some Aalni bhaat as well! I was was mind blown when I tried this last year at Jagdamba in Pune and then I did a few trials and took you through the process as well through my stories. I know you guys have been waiting and finally this recipe is yours. Do try the recipe & let me know! This is one of my favorite recipes and one of my favorite YFL videos too! Much love ❤️ Cheers! (Written recipe continued...) Kala mutton rassa Ingredients: • Cooked Kala masala 1 cup • Mutton stock 1 litre • Salt to taste • Garam masala a pinch • Lemon juice 1-2 tbsp or as per taste • Fresh coriander a handful Method: • Set a stock pot on medium heat, add about 1 cup of cooked kala masala & 1 litre of mutton stock, stir well & cook, further add the remaining ingredients, stir well & let it simmer for another 10-15 minutes, check for the salt & adjust accordingly. I like the rassa to be thin, you can adjust the consistency of the rassa as per your preference. • Kala mutton rassa is ready! Serve it steaming hot with kala mutton masala & other components. Kala mutton masala Ingredients: • Mutton stock as required • 90% cooked mutton • Cooked kala masala • Ghee 3 tbsp • Garam masala a pinch • Lemon juice 1-2 tsp • Fresh coriander a handful Method: • Use the same iron vessel used for cooking the kala masala & add little mutton stock to it, cook the masala for 4-5 minutes, the consistency should be somewhere like thick masala. • Now add the 90% cooked mutton pieces & stir gently while mixing well, add some more additional mutton stock as required or you can also add little hot water so the masala coats the mutton really well, now cook the mutton on high flame for 4-5 minutes. • Take a tadka pan & add ghee, heat it little bit & pour over the mutton masala, further add garam masala, lemon juice & handful of fresh coriander leaves, cover & cook for 10-15 minutes on low flame, the masala will again leave ghee & your kala mutton masala is ready. Serve hot mutton rassa & other components. Aalni soup Ingredients: • Mutton stock 750 ml • Ginger 1 inch (julienned) • Green chillies 2 nos. (slit) • Fresh coriander leaves a handful • Lemon juice 1 tsp • Black pepper powder freshly crushed Method: • For making aalni soup, set a stock pot & add the mutton stock to it, the quantity of mutton stock can be adjusted depending on the quantity of soup you would love to make. • Add the remaining ingredients to the mutton stock to give a distinct flavour, check for the seasoning & adjust accordingly. Bring to a boil on high flame & further simmer for 5-6 minutes on medium flame, your aalni soup is ready! Serve hot with kala masala mutton, mutton rassa & aalni bhaath. Aalni bhaath Ingredients: • Ghee 2 tbsp • Jeera 1 tsp • Onion 1 medium size (chopped) • Ginger 3 tbsp (julienned) • Turmeric powder 1/4th tsp • Rice 1 cup (washed & soaked) • Mutton stock 4-5 tbsp • Salt to taste Method: • Set a pressure cooker on medium heat, add ghee, jeera, onions & ginger, stir & cook until the onions are translucent, add the reserved hirva vatan & turmeric powder, stir & cook for a minute on medium flame. • Further add washed rice, mutton stock & salt to taste, stir well & pressure cook for 2-3 whistles on medium flame. • After the whistles allow the cooker to depressurize naturally to open the lid. • Your aalni bhaath is ready! You can serve hot at this stage by adding some freshly chopped coriander leaves, I prefer the texture to be more of khichdi consistency, so am going to add some hot water or stock, mix well & mash well to break down the rice, finish it with freshly chopped coriander leaves & mix well, your aalni bhaath is ready! Serve hot with other mutton components.

First off... the pronunciation of "Kalaa" is perfect. Haven't met any Punjabi yet who got this right. Shows your commitment to the culture of the dish you are cooking. The recipe also is amazing. its not that difficult ..people usually dont try to get it right ..i tried ...i got it right ...i am a bengali..also a few more languages of the western india has that letter ..punjabi being one ...probably why he coud get it right . the recipe is beautiful though.
I have seen this character frequently used in Shirdi Sai Baba Aarti but have always pronounced it as hindi ल - thought maybe ल is written as ळ in marathi😂😅
@@rajtheory I think we Mallus have an alphabet that sounds similar - "ള" - It's in the "ल" family, but you pronounce it by arching your tongue back. Sounds a lot like your 'ळ'.

I realy like to drink that alni soup. Whenever my mother cook mutton or chikane she always keep some soup separate for me. It aslo helpful when have cold it as immunity booster for me
@@saumyadeshmukh6758 we in Konkan Raigad area do follow the same procedure without salt to make a soup but from boney part like mutton legs . usually process goes from early 4pm on chulha and continue till 7 am it's a slow and long process as we don't use fire but heat from a burning charcoal . But it taste delicious as well

I am not a Marathi speaking person but have friends who do. So I know that your pronunciation of the words / ingredients in Marathi is authentic. I also have heard your pronunciation of Kannada words and again, perfect. It shows how much effort you put in while making dishes from different States. I made Kaala mutton for lunch today, following your recipe. I am typing this even as my husband and daughter are relishing it. I paired it with our Ragi mudde (Ragi ball), and chapathi. It is so good (even if I say so😀), that this recipe is for keeps. Mutton quality was also good, which contributed to the overall taste. The only deviation which I made was that I used grated copra as I didn’t have whole piece. So I dry roasted the copra flakes on low flame till they turned a darker shade of golden brown. In the end I think it is quite an easy recipe, resulting in a very traditional and tasty dish. Thank you as always, chef Sanjyot.

Kala mutton rassa
Ingredients:
• Cooked Kala masala 1 cup
• Mutton stock 1 litre
• Salt to taste
• Garam masala a pinch
• Lemon juice 1-2 tbsp or as per taste
• Fresh coriander a handful
Method:
• Set a stock pot on medium heat, add about 1 cup of cooked kala masala & 1 litre of mutton stock, stir well & cook, further add the remaining ingredients, stir well & let it simmer for another 10-15 minutes, check for the salt & adjust accordingly. I like the rassa to be thin, you can adjust the consistency of the rassa as per your preference.
• Kala mutton rassa is ready! Serve it steaming hot with kala mutton masala & other components.

Ingredients:
• Mutton stock as required
• 90% cooked mutton
• Cooked kala masala
• Ghee 3 tbsp
• Garam masala a pinch
• Lemon juice 1-2 tsp
• Fresh coriander a handful
Method:

@@rajtheory I think we Mallus have an alphabet that sounds similar - "ള" - It's in the "ल" family, but you pronounce it by arching your tongue back. Sounds a lot like your 'ळ'.

I realy like to drink that alni soup. Whenever my mother cook mutton or chikane she always keep some soup separate for me. It aslo helpful when have cold it as immunity booster for me

@@saumyadeshmukh6758 we in Konkan Raigad area do follow the same procedure without salt to make a soup but from boney part like mutton legs . usually process goes from early 4pm on chulha and continue till 7 am it's a slow and long process as we don't use fire but heat from a burning charcoal . But it taste delicious as well

I am not a Marathi speaking person but have friends who do. So I know that your pronunciation of the words / ingredients in Marathi is authentic. I also have heard your pronunciation of Kannada words and again, perfect. It shows how much effort you put in while making dishes from different States.
I made Kaala mutton for lunch today, following your recipe. I am typing this even as my husband and daughter are relishing it. I paired it with our Ragi mudde (Ragi ball), and chapathi.
It is so good (even if I say so😀), that this recipe is for keeps. Mutton quality was also good, which contributed to the overall taste. The only deviation which I made was that I used grated copra as I didn’t have whole piece. So I dry roasted the copra flakes on low flame till they turned a darker shade of golden brown.
In the end I think it is quite an easy recipe, resulting in a very traditional and tasty dish. Thank you as always, chef Sanjyot.
