DJ's are usually one song before the listener. While you're hearing one track, he is listening to the next song in the playlist through his headphones. He isn't changing the current track, he is preparing the next track in the playlist.

The 'scratch' at 2:25 is how you cue up tracks on vinyl - you cue it up roughly on the beat you want and then move the record back and forward over the beat to get the track perfectly cued up. you don't hear it because it's only going to his headphones. Hope this helps :)

As a 45 yr old growing up on old films my dad used to watch, I was exposed to a lot of swing and Big Band, but I also am a product of the rise of hip hop,rap,house and techno, but I'm crazy about this stuff. It's just makes me happy. It's the best of two genres that I love and listen to a lot. Keep making great mixes. Two eras that were very cool, colliding and creating a slick sound!

These to genres seem to fit perfectly together, love the understated scratching I was waiting for mr scruff get a move on 7:58 lol it wouldn't be the same without it LOL.
He is beat matching the next song Parov Stelar - Wanna Get so that their BPM (beats per minute) are the same. The reason why you can't hear anything is because he has the crossfader (volume) completely turned to Catgroove hence you can't hear anything that he is tweaking in Wanna Get (which only he can hear through his headphones). When you see him touching the sides of the CD and the pitch knob he is actually just aligning the two songs. Source: DJ :)
