Imagine someone telling a former sushi chef to not make raw seafood dishes. I don't understand why people are scared of raw meat. On Valentine's day I cooked a blue ribeye, I was told it was one of the best steaks they ever had. I wouldn't trust Walmart meat, but I trust the head butcher at my local grocery store. (he's butchered 2 deer for me at his house level of trust)

I still consider myself young at 44, and i learn new stuff every single day. There are a ton of ignorant people in this world…especially sitting around making ignorant comments on YT. They make these comments just to try and start something. I’ve rambled enough.

@@-a-strikelures1212 Have you had a fresh raw scallop, pan seared is pretty much raw still, and a cooked scallop? Oysters same thing. Fresh raw squid is so good. I bring soy sauce with me to the dock if I target them for bait, the first 2 don't become bait. Freshwater has to be cooked tho, bacteria and stuff.

I've seen the criss-cut done with toothpicks or chopsticks on the sides, so the knife only goes down until it hits the toothpicks, making all the cuts thin and consistent.

As a Polynesian, living in Brizzy, I eat anything from the sea raw from molluscs to crustaceans, and my favourite is raw snapper liver and both female and male roes....best hangover food ever. Sunday morning brekky after a hard night. Cooking seafood kills the real taste of the sea. Keep doing what you do best, screw the haters.👍

As for the raw - remember some of us are less experienced and knowledgeable about fine cuisine. We need baby steps, and appreciate all the work you guys do! I'd love to try the fried version, and work up to the raw as I gain confidence. ;)

Great call on the figure 8. The aori in Japan are different species but very similar. You can tell by the shape of the fins. Japanese ones are oval while the aus/taz ones are dialmond shaped.
If you worry about cutting the calamari depending on the thickness place a couple of skewers or chopsticks on the edge to stop the blade going all the way through.

Taku, I really hope you got to fish the Tailrace in Launceston. The biggest sea run brown trout come in to feed on eels that get sliced up by the turbines. I've hooked a few big ones but nothing like the photos that are online!
