Slow Cooker Steamed Treacle Sponge | Old School Recipe

    Sponge:
    175g softened butter
    175g self raising flour
    175g caster sugar (I used granulated)
    3 large eggs
    zest of 1 lemon & 1/2 juice
    45ml milk
    syrup base:
    250g golden syrup
    juice of 1/2 lemon
    equipment: 1 1/3 litre/quart pudding basin (I used foil as a lid)
    For sponge, mix all the ingredients as you would a cake (cream sugar, add eggs one at a time, sieve flour and mix until smooth, add milk and finally add zest and juice of lemon - a bit at a time. Avoids splitting)
    Mix 1/2 juice of 1 lemon into a bowl with the golden syrup. Pour this into a greased pudding basin. Add cake batter. smooth the top (aka the bottom) cover loosely with foil
    Put approx 500ml water in slow cooker (take out trivet) select HIGH and cook for 21/2 to 3 hours (I went over by 20 mins 3hr 20 mins with no problems)
    Leave to completely cool before upending onto a plate. Serve with custard, ice cream or cream (or all three!)

    Try using a pudding bowl then Tie string round the rim of your bowl and make a handle to make it easy to lift out x

    I remember as a kid my mum also made treacle pud in a pressure cooker and she used suet those were the days ❤

    This takes me back to Sunday evenings as a child. Mum often made this or with suet and jam in the winter when we fancied something sweet. I suppose that it was cheap and filling.

    Hi Kerry, if you want to slow cook something in your Ninja 11-1, or 15-1 for less than 4 hours, then set it to 4 hours, then once you press start it will let you reduce the cooking time.

    Catherine Phipps' Modern Pressure Cooking has a really good section on puddings including sponge puddings. I can't put the whole recipe but the instructions include putting the lid on loosely, bringing the water to the boil then steaming for 15 minutes, after which you close the lid, bring up to high pressure and cook for 35 minutes, it's then a natural pressure release. She has an excellent pressure cooker fruit cake recipe too, which is now the only way I ever make fruit cake. Really good book!

    I use the steam function, and also use grease proof paper first then the foil 😊

    I would omit the lemon from the syrup. And put it in a basin.

    I use the Mary Berry tip - and put an old jam jar lid under the pudding basin so it is not touching the bottom. Do this for all steamed puds including Christmas. We never wait and just serve straight from the basin. Too greedy! However we steam a pudding all day and find the syrup goes even more syrupy and sticky! Delish 🤤. S❤

    You've just reminded me of when my mother used to make bacon surt oudding, covering the basin with muslin and greaseproof paper making sure she put a pleat in it. Its never occured to me to try it in a pressure cooker 😮. She would soend hours watching over it and add additional water, good times. My mouth was watering. Thank you🤗

    Also I only add a small amount of treacle then while it’s hot I add a tablespoon of cold treacle over the top

    I’d omit the lemon juice, use a smaller basin and having tried cheaper golden syrups would only ever use Tate & Lyle. There’s no taste like Tate & Lyle but it’s come out well.

    Hi Kerry that looks like a proper pudding. Feel like I don't use my slow cooker enough will have to experiment more. 7.30 in the morning and already want pudding not good😂

    Heinz stopped making these puddings. Shame as they are certainly a comfort food. Will be using this recipe though. A white ceramic pudding basin is the ideal dish to cook it in. Great vlog again Kerry Thank you

      In the tins?! I remember Heinz making puddings in the big tins.. boy was it a treat to have one of them with custard! I remember the chocolate one which was divine too! I’m so glad I’m not the only one who remembers them, none of my friends seem to! The sauce was lovely, & they weren’t stingy with it either!

    Thanks Kerry for trialing this in the slow cooker. What a success!! I have a whole load of apples from my tree, so I'm thinking of trying this with chopped apple. I'm hoping the slow cooker will make it lovely and soft. Obviously can't miss out the syrup though!! Thanks again x

    Kerry if you fold grease proof paper into a strip put it under the cooking pot and fold it so you can lift out the cooking tin it’s so mush easier

    Not sure if yours will do it but when you start the clock on ninja you can reduce the time once it’s started counting down

    I think maybe there was a little to much treacle went in so maybe it stopped it rising. I only put an amount to cover the bottom , and then the sponge is free to rise, I think the treacle in this case helped prevent this from happening, it looked nice however. I would have done it in high as well. All only my thoughts , not to ssy I am right at all. Thanks for the vlogg.x

    Nice to see you enjoy a good memory. Ok, I must be in a strange set of mind to clarify my following comments. I've checked everywhere on my body and I don't have a QUICK MODE😂😂!! MY SETTINGS ARE SLOW AND LAZY 😅! Did you stir the sponge batter with a butter knife? I, too, love lemon everything!!! Glad the sponge worked for you.

    In my humble opinion you cannot beat Tate and Lyle golden syrup for depth of flavour,I have tried home brands but non come close to the original,I know it’s more expensive and that might be a factor for a lot of people but I don’t use it every day so I buy that

      I admit to keeping a small tin of T&L for recipes like this where I want the special caramelly flavour and use my Lidl in recipes like ginger cake.

      I have commented on this it's syrup not treacle it's not in the ingredients list so why is k calling it treacle ? Graham gets about also does this too it's incorrect.

      I still call golden syrup treacle, if i wanted treacle for a recipe it would be golden syrup, if i was making a Xmas cake i would buy black treacle

    Technically its syrup sponge as per the ingredients listed there is no treacle in it !treacle is a whole different beast its black to start with!
