Pauline Kata I opted for 'steamed’ rather than baked option by using the simple 'pot in water on stove’ method then slow steam on low to medium heat for approx 45mins to an hour. You get the best result out of steaming , my purini was soft to the touch, nicely moist with just the right texture. Although I must admit, in addition to this recipe, I added 1/2 a cup of olive oil ( or vegetable oil) and two eggs. These are optional of course but it worked for me. Good luck.
