Boy that is my kind of eating and my kind of burger. I will have to try that sauce recipe. You know when I was growing up in the 50's it was a common thing to see a drippings cannister of some sort on or near the stove. Mama's back then knew how. Our newfangled dangled society has everything on it's head. I had a early morning paper route before school, and on the way home each morning it was gettin up time and the mama's were all at the stove cooking breakfast frying bacon & eggs and that smell was coming out the stove vents floating all over the neighborhood. Boy, I couldn't wait to get home because I knew my mom was doing that very thing. Your channel and food reminds me of those good times in this country. Thanks-Phil in Florence
That looks killer Rus! If I'm not mistaken years and years ago, McDonalds used to fry their fries in beef tallow...or it may have been lard. These burgers and fried green maters looked and I know tasted fantastic!! Excellent!

Now they use a hydrogenated cooking oil with beef flavoring added, which is much worse than the beef tallow they use to use, and the fries aren't near as tasty as they once were. Killer burger Rus. I have a huge block of beef tallow in my extra fridge. The stuff is white gold! You haven't lived until you had chicken fried in it. There is a burger joint in Memphis called Dyer's that deep fries their burgers. Supposedly they've been using and straining the same grease for almost 100 years, adding more to keep the level up. That's seasoned! Great job brother!

I noticed that the american cheese you used in the sauce seemed to be the orange processed type like Kraft singles or the like. Can the deli sliced american cheese be used or does the recipe call for the processed type specifically?
Reminds me of a real diner (The Dairy Bar) hamburger back in the days, back when I was a kid and would ride the train back to Atwood Kansas for the summer to work on the Uncles farm:) Great Video!

OMG.. this is awesome.. I bet the burger got all over you when you bit into it... I have the same problem when frying burgers.. the swell up in the thickness and shrink in the diameter..... Do you think if the patty was semi frozen it might help prevent that? +Cookin with Surfin Sapo Thanks Sapo! Yeah, that's why I pressed them down to 1/4", knowing they will shrink in diameter, while getting thicker. My mother use to start out thick and about the size of the bun, then those burgers would turn into what I use to call golf ball burgers lol. Freezing may help, but going even thinner and bigger would make them not so thick after they cook, but that's about how I like mine. Meat to bun was good, and nice hunk of meat. McDonalds used tallow in the old days to fry the fries just like a lot of people did back then, but in the early 90's they were pressured to use a less saturated fat, so they have been using vegetable oil since then.

Allow me to share a middle eastern sauce that goes well with burgers. Its simple and savory. I don't know if you can find a middle eastern joint in Mississippi selling Tahini and pomegranate molasses, but if you do, mix the two and add a fresh herb like Rosemary or mint, just some not too many and spread it on the bun. Bon appetite!
Sounds great. I can get the Tahini locally but not sure about the pomegranate molasses. Maybe I can find that online. What ratio of Tahini to the molasses?
+Smoky Ribs BBQ & Southern Cuisine cool, as for the ratio, for every quarter cup of tahini, you add 3 spoons of pomegranate molasses. But wait! Here's a trick, you can use the molasses to paste your BBQ if you want to. Or to enhance an existing wet rub with some of the savory fruity flavor you get from the pomegranate molasses.
My son said it was the very best tasting burger he has ever had, then I had to tell him these are the burgers I was raised on, minus the sauce that is lol

I always love a good greasy burger, that sauce sounds like a good idea too.
These cooked in pure beef fat is the tastiest burger you will ever eat. Not good for the waist line, but one every now and then ain't gonna hurt lol!

My mother use to start out thick and about the size of the bun, then those burgers would turn into what I use to call golf ball burgers lol. Freezing may help, but going even thinner and bigger would make them not so thick after they cook, but that's about how I like mine. Meat to bun was good, and nice hunk of meat. +Mpar Mpee Kiou Based on the individual ingredients this would last as long in the fridge as what Mayonnaise would, that being the the most perishable condiment of everything that went in. You would probably consume it before it ever went bad. Thanks for watching

I really don't know the self life in the fridge, but it can be used as a salad dressing as well. Pretty good stuff. It shouldn't last too long ;)

I know Greg from Ballistic BBQ used to use lots of beef tallow in the past. He said it was the same thing McDonalds used to deepfry their fries IIRC.
McDonalds used tallow in the old days to fry the fries just like a lot of people did back then, but in the early 90's they were pressured to use a less saturated fat, so they have been using vegetable oil since then.

+Guy Mooglie lol, it was one dripping good burger for sure. Tallow is rendered beef fat and sometimes mutton, and lard is rendered pork fat, but I have heard the term beef lard, but primarily it's pork

Allow me to share a middle eastern sauce that goes well with burgers. Its simple and savory. I don't know if you can find a middle eastern joint in Mississippi selling Tahini and pomegranate molasses, but if you do, mix the two and add a fresh herb like Rosemary or mint, just some not too many and spread it on the bun. Bon appetite!

Here's a trick, you can use the molasses to paste your BBQ if you want to. Or to enhance an existing wet rub with some of the savory fruity flavor you get from the pomegranate molasses.
