Rus I had to tell you about this one! I decided the other day to just out of the blue try my own take on this bad boy. 1. Patties made with pork and Polish Sausage and Cajun spices. Wow... just wow, blew my mind. 2. Beer battered Cajun Onion Rings. 3. Mayo, Russian Mustard and Cajun Seasoning to make the remoulade 4. Fresh baked buns toasted with a little bit of garlic butter. Absolutely amazing burger. My fiancée wanted another, made her one burger because she usually won’t want another, hell she put that thing down quicker than I did mine lol I wanted to let you know about this one. Call it the Cajun Po’lish boy lol it was something different, just cool to use regional items to make favorites from back in the states. Have a good one Rus!

Fantastic Cajun burgers Rus, Nothing like a Griddled burger crust. We had a old burger joint here run by Tony. His burgers resembled yours in every way. Other than adding green onions to the meat mixture I couldn't figure how he got that hint of smoke using a commercial griddle. The smoke flavor came from the sausage mixed into the patties, Like yours they were 3/4lb burgers (before cooking). As Greg stated let that griddle get a good black seasoning on it. Restaurant supply stores sell a Griddle scraper tool. They have replaceable cutting blades & a cutting depth adjustment, kinda like a wide wood plane but its shaped different. Commercial restaurant griddles build up a thick coat quickly that has to be shaved down. My friend Billy used to work at Brewbachers shaved it to about 1/64" every few hours. It about a 24" x 36" griddle built into a 60" range... They turned out 100's of burgers plus griddled chicken breast, shrimp, catfish & poboy meats daily...
+Louisiana Cajun Recipes (007bondjb) Hey green onions sounds like a nice addition to those patties! Yeah, I won that nickel plated griddle from one of Greg's contest a few years ago. It takes oven cleaner after a cook to keep that shine, but like him and you said, I'm just gonna let it season. I do need a scraper. Thanks for that tip, I'm gonna see what I can find. It would work good on my Mojoe griddle as well
+Smoky Ribs I just looked at those griddle scrapers, They are way to big for a small griddles, If you did get down on it you would turn your pit over on the ground. They are made to put serious elbow grease on a 600 lb + griddle. They are held with 2 hands like a 6" side grinder

AWESOME is all I can say! Question: That half moon griddle that fits your grill. well,I have one also but mine rust like crazy! Any suggestions on how to prevent that?
+Vance Smith Thanks, I appreciate it. My half moon griddle has been plated with a nickel plating so it can't rust, but I also have a Mojo griddle which is nothing more than carbon steel and it to will rust if not cared for. First heat up your griddle, and sprinkle table salt all over the surface, then pour a couple of tablespoons of vegetable oil in the center, and take a hand full of paper towels wadded up, and start making circular motions working your way out to clean the griddle. Do this as many times as needed to remove the rust and anything else on the griddle. Once it is clean coat well with more vegetable oil and let this oil sort of cook in. I always clean mine after every cook with the salt and oil, then coat before storing it inside a closet or anywhere where it's not subjected to a lot of humidity and weather. Bit of a pain, but it does keep it looking good and prevents rust

We have had rain which has affected the salinity of the water, but the temps are finally falling, and with a little luck, I should have a video up soon showing the catch and the cooking by the end of the month. Got a Thanksgiving video I have to shoot next weekend, then I'm going fishing! I'm kinda wanting to take my channel to new levels with more outdoors stuff like this. Your welcome. I used 2.5 pounds of beef to 1 pound of Andouille sausage, but you would be fine with a 3 to 1 ratio. The link was for a special on the brush. I guess it's been discontinued. Thanks for watching

+Matt Johnson Thanks Matt. The griddle is not made by Craycort. It was custom made and nickel plated. I won it in a video contest a few years ago. Greg from Ballistic BBQ may be able to tell you who makes them.

AWESOME is all I can say! Question: That half moon griddle that fits your grill. well,I have one also but mine rust like crazy! Any suggestions on how to prevent that?
+Vance Smith Thanks, I appreciate it. My half moon griddle has been plated with a nickel plating so it can't rust, but I also have a Mojo griddle which is nothing more than carbon steel and it to will rust if not cared for. First heat up your griddle, and sprinkle table salt all over the surface, then pour a couple of tablespoons of vegetable oil in the center, and take a hand full of paper towels wadded up, and start making circular motions working your way out to clean the griddle. Do this as many times as needed to remove the rust and anything else on the griddle. Once it is clean coat well with more vegetable oil and let this oil sort of cook in. I always clean mine after every cook with the salt and oil, then coat before storing it inside a closet or anywhere where it's not subjected to a lot of humidity and weather. Bit of a pain, but it does keep it looking good and prevents rust

+Bob Ogus Wow, you must have been reading my mind lol! I just recently purchased a 14' Angler Kayak, and will be going sometime this month for speckled trout. They are moving into our bayous now. We have had rain which has affected the salinity of the water, but the temps are finally falling, and with a little luck, I should have a video up soon showing the catch and the cooking by the end of the month. Got a Thanksgiving video I have to shoot next weekend, then I'm going fishing! I'm kinda wanting to take my channel to new levels with more outdoors stuff like this. Your welcome. I used 2.5 pounds of beef to 1 pound of Andouille sausage, but you would be fine with a 3 to 1 ratio. The link was for a special on the brush. I guess it's been discontinued. Thanks for watching
