    Glutinous rice also known as sticky rice is a rice variety that is much stickier and gooey when cooked than the ordinary rice that has become a staple food for many Asian countries. There is something we really love about its gooey texture that is a perfect main ingredient for making homemade sticky rice desserts either baked, fried, grilled and even boiled together with other mixed of ingredients all together. It is definitely a great alternative for pastry dessert as Oriental cuisine has its version of its own.

    I just cooked this dessert and it's deliciously different. I made a few additions, I added unsweetened shredded coconut in addition to the coconut milk; I added a tsp. of pure vanilla, a dash of nutmeg and cinnamon. Also, because I eat low sugar whenever I can, I substituted half of the brown sugar for xylitol, a delicious sugar substitute. I love that this dessert is naturally gluten free because of using only rice. Next time I may add a fresh smashed banana in with the recipe along with the normal recipe. Yum!

    ganyan magluto lola at nanay ko ng biko... kumbaga yung mantika na ng niyog ang ihahalo sa lutong malagkit... kaya ang ending nya ndi sya malambot gaya ng ibang biko... except yung bake di yan nila ginagawa.... mas masarap po sya at matagal mapanis kht wala sa ref! gud chef

    this is different than how most of us filipinos makes biko but it still looks good. I might try cooking it using your recipe and see how it turns out since you used coconut oil to cook the rice.

    My Auntie used to cook her biko this way trust me guys this recipe is very delicious with the latik on top. Now I cook my biko this way too never cook anymore the way my mom taught me which has to boil the sugar and coconut. This is way better than that. Thanks for sharing this recipe.

    I used to eat this as a kid growing up in Hilo, Hawaii; and I always wondered how the biko was always served on a dried banana leaf. I also liked the way you cut the biko into portions with chef scissors. That was too cool. Your video answered a lot of questions for me. Mahalo nui loa (Thank you very much)! Salamat.

      Unfortunately this is the wrong way to cook it. You must caramelize the brown sugar in the coconut milk and then add the rice. You don't add dry brown sugar to the cooked rice.

      +Chef Rafi's Awesome World There is no wrong in his recipe. There are too many versions of rice cake or biko. And that recipe is how exactly we prepare it. You have your own version in your place and vise versa. We just have to learn to appreciate or respect other. There is no wrong way of cooking food, it's just differ from each place's preference or taste.

    thanks for the video. but i think it must have coconut milk as well mixed onto the brown sugar & rice itself. otherwise the taste would be different. i suggest boiling the coconut milk on the same kwok used after the latik. at a certain point the rice can be mixed onto it.

      Definitely, Biko will not be Biko without the coconut milk. Otherwise, it will just taste like sticky rice with brown sugar.

    Biko with just brown sugar, that would taste just like brown sugar, would it? The usual will be to almost boil the coconut milk then add the brown sugar and cook for a little while then mix it with the sticky rice.

    Wow this is a perfect way to cook biko, I'm Filipino and that's the way my mama teach me to cook it before. But mostly filipino no oven thanks for improving the way to cook biko. I plan to cook it now, and I well try to bake it. but there's no banana leaf here, I it's still ok if i just spray the baking pan with butter?

    Kahit ilang linggo pa ito sa ref hindi masisira yung gata kasi ginawang mantika 😊

    No need to oven, you can serve directly with just brown sugar with it (rice).

    In the rice cooker I added coconut milk and water-more c.milk than water. Didn't have any problem with the rice cooker cooking the rice properly.

    If anyone knows I would appreciate it. I don't think the vlogger answers his posts. I have 2 questions: can the water the rice is cooked in be substituted for coconut milk? Also, do the banana leaves give the dessert flavor? I have all the ingredients except the banana leaves. Thanks!

      Karen Cas I wouldn't substitute all of the water with coconut milk. I tried once and the rice did not cook properly, I would substitute half. As for the banana leaves, its just a way to pack the rice you should be able to use anything like parchment paper or food grade plastic wrap.

    You're supposed to caramelize the sugar in coconut milk not add dry sugar to the already cooked rice. Didn't it taste sandy that way?

      the traditional way is by cooking the coco milk with brown sugar until it thickens..then add the precooked glutinous rice, mix until it thickens..and latik is optional..but his recepi looks great as well😀😀

      That's how Ilocanos cook. It's called inkiwar for us. We directly mix our "tagapulot" in the cooked malagkit while mixing it with the coconut oil from the Latik, so that the shelf life is more longer.

    the salt is for balancing the sweetness of the biko... but you cant use sugar if you make dried fish or TUYO.. HAHAHA..

    he should be put in oven so that the sugar will melt it..the proper way to cook the biko is too dissolve the Sugar in a fan together with the coconut milk until it becomes l atik. .but it's ok he has a version and looks yummy too...

    Thanks for coming up and sharing this video buddy. A friendly advise, though - mag tagalog ka na lang. You're trying hard to speak with an american accent but it does not sound right. Secondly, there are errors in your grammar and sentences which is annoying. Anyway you tried, but you failed. The other thing among other mistakes is, you use the word or term "stove top" instead of "burner". FYI - Stove top is the upper surface of a cooking stove, including the burners. And the burner is either the fuel-burning or heat-producing device on or within the stove top. OMG you even pronounced the word 'Tagalog" like a foreigner. Obviously, you are a Filipino buddy. I suggest that the next time you come up with an educational video, please speak in our language and just have captions in English. Again - MAG TAGALOG KA NA LANG PADRE. I am proud to be a Filipino!

      But this is how my grandmother cooks in Ilocos! The "tagapulot" or palm sugar is mixed directly with the cooked rice. We call it "inkiwar" which you call "biko". There is no right or wrong in cooking this method, if your choice is to caramelize your sugar, you can do that way but you can't tell that's not how the way to cook Biko.

    Please DELETE this video and correct the process with the way it should be. You can't cook 3-1/2 cups of rice with 1-1/2 cups of water along with the rest of the incorrect procedures.
