      Tuna is considered safe from parasites, salmon is not.

    So you bought this and didn't freeze it and ate right away I see, I thought you had to freeze to kill parasites first, especially if wild and not farmed? (Pardon for asking) Good videos- Carl

      Hey Carl, thanks for stopping and for the kind words! Certain tuna like this yellowfin are exempt and are safe without freezing
      The FDA Code: 3-402.11 has the guidelines for freezing fish, however big fish like this tuna are exempt from the rule:
      "The following fish species are exempt from the freezing requirement: Yellowfin tuna,
      Bluefin tuna Southern, Bigeye tuna, Bluefin tuna Northern."
      This is because of multiple reasons:
      1. Tuna are resistant to parasites that can affect human
      2. Tuna are gutted and cleaned shortly after catch (if not done quickly GI anisakis can move into the flesh)
      3. Tuna are flash frozen on the ships

      @@awkke yes, I'll be posting a video more on this. From a parasite perspective, both the farmed Atlantic salmon and tuna meets criteria for safe raw consumption. However as with all raw foods there is risk of bacterial spoilage

    I used a extra small salmon filet to make some sushi. The filet was frozen right after getting home from costco and was in the freezer for 3-4 months. Followed your videos on how to cure etc. And I tasted a very small piece before I let it sit in the fridge. And my mouth felt slightly was numb on the side I chewed it on. Probably just me being paranoid/placebo but I didnt eat the rest of it and saved the other frozen filets for cooking. You think it was bad?

      And yes that's exactly correct. It's safe from a parasite perspective. There is still bacterial spoilage risk as with all raw foods

      Thank you for the info. What exactly does bacterial spoilage mean? Does that indicate risk for infection if eaten? Spoilage? Sorry for the dumb questions. I really want to start to do this because we love sushi

      @@Cdizon82 yes exactly, if there was an issue with temperature control while it was in transport or the fish was improperly handled, bacteria can get on the surface and grow to a limit where it will make you sick (like eating any other spoiled food). At this point it's best to cook it to make it safe
      Imo Costco's supply chain is excellent and this is how we've had poke for years

      @@Cdizon82 this is a tough one and it is impossible to tell without a microscope and culture
      The smell test I do rules out absolutely spoiled ones, but the rest carries the same risk as all other foods (like oysters, undercooked beef etc)

    So I don’t realize that Ahi tuna often contains bigeye tuna, which is on the high mercury. Do not eat list.

We live in a country where rolls are also known as sushi. I think you are the one that needs a clue...haha

      @@BWTECH0521 Yep. I really do think this. To say all raw fish is sushi is like saying anything with wheat flour in it is bread. How would you react if a foreigner started calling a chocolate cake or a donut 'bread'? It shows a lack of knowledge of the dish and as a content creator, should be held to a higher standard to help people understand the difference.
