    Just to clear the confusion some of you guys have, I left eggs soaked overnight with shell. Shell doesn’t come off by itself. You need to peel it. Alternatively, you may soak them without shell. That actually maximizes the flavor and gets darker color. I tried both ways. Enjoy 😊

    • @Taricus
      @Taricus 3 ปีที่แล้ว +4

      If you leave the broken shells on they get that really nice marbled look tho ^~^ The university store used to make these and I would wait until right before they closed for the night so that the eggs were soaking all day long, because they would absorb all the flavor. I never had them before I lived in China. Now I make them all the time LOL!

      @@ChineseHealthyCook yeah, coming back from class, they always had the pot simmering on the counter too, so you could smell all the flavors as soon as you walked in the door. They got so used to me coming in during the evenings that they would say, "没有鸡蛋" as soon as I walked in, if they sold out during the day 😂

    Back in the 90ties, I learned this recipe in the shape of "soy sauce eggs". Same procedure, you just peel of the shell completely and let them soak up the flavour. I was driving trucks, back then. So they where a wonderful snack to have without having to stop.
    I'll really try this version with all the spices. Here in Germany, we have "Soleier". Which is kinda similar: the eggs are preserved in a brine, using spices in them, as well. In british-spoken countries, people use vinegar in that mixture. A completely different thing!
    I like it without any vinegar or other acid, like lemon juice, etc.
    This is surely a "must try"-version to me.
    Thank you, Ling!

      @@ChineseHealthyCook You're welcome! It used to be a classic snack in pubs, to offer this. Usually, back then, pubs offered this or meat balls. (Jamie Oliver's dad offered meat balls). Found this about the eggs on wikipedia:
      en.wikipedia.org/wiki/Pickled_egg
      I loved your explanation about the origin of the name of the Kung Pao dish. I always love to learn about the history of recipes.
      Try look for "Tarte Tatin". I once met a guy from France. His parents still knew the sisters Tatin in person. A world famous tarte, by now. My fiancé had it, served on a cruise, down in Australia, last year. (Made with pears: cooking is a never-ending journey!)
