So for posterity - it turns out that there's an older model Topeak Super Tourist DX Disc pannier rack. With that one there's not a larger tube most of the way along the bottom connectors, so you need a longer bolt which goes all the way through. M4 50mm worked for me in the end. To connect the top connectors m4 10mm screws and nuts work well.
I found that everywhere was uphill and into a headwind when I last rode a bike, lol. Good sturdy, well made rack. Much more chunky than the ones we used to get and the pannier looks well made too. Look forward to seeing it on the road. It seemed for a long time that you couldn't get a large wheeled bike, unless it was with super skinny racing tyres. One of the best improvements on bikes, I think, is the brakes. I'm certain they saved my bacon once. Atb.

Hi there. Thanks for watching!! I didn’t make a separate video on the panniers but can highly recommend them. I use it every time I go out. We mostly go out as a family so the panniers are invaluable for storing everything from our lunch to clothing and other bits and bobs. It slides effortlessly from the rack and when it’s on, it’s solid.
