A nephew from near the Gulf coast uses mustard rather than egg and milk as a base for the breading. I could not even taste the mustard. He uses it because it is easier. He puts his fish in a bowl, squirts on some mustard and stirs it around until the fish is completely coated. I wonder how that would work on cauliflower.
