    I've made these for two different summer parties. People were blown away with how delicious they are! I wrapped each one in parchment paper and tied with a colorful baking twine.

    This was a great recipe! But I’m going to mention two things if anyone decides to try following along themselves.
    1) Lay out the 2 eggs and unsalted butter immediately. They need to be room temperature and the video doesn’t mention them until you’ve gotten to the point you need them.
    2) If you need to put your cookie back in the oven to soften the butter holding the parchment, let it cool again. If you try flipping it right away it will fall apart.
    Either let it cool again or extend the parchment paper to give you a way to safely pull the cookie out. It’s a lot less stressful that way.

    I am vegan but i love your videos not due to the recipes (i can find vegan versions so easily) but for your voice and vibes.     When my brother and I were kids my family didn't have much money. Our mom couldn't afford real ice cream sandwiches so we made them ourselves using graham crackers, vanilla ice cream, and wax paper. They weren't real ice cream sandwiches but to us they were perfect.

    These look soooooo good....my mom showed me long time ago when cakes don't turn out to place over burner. Just move around all the surface quickly. Fast and works.

    I've done this. Brought them to work in a cooler with dry ice. It was a fun project that everybody liked.

    I love it when I watch someone make a recipe and I have all the ingredients...even the sprinkles! My kids will love it. They most definitely won't be as neat as yours but hopefully just as delicious

    Those look really good! Btw, if the hardened butter makes the cookie stick in the pan, a hair dryer on the back of the pan might be faster and use less power.

    I do love The Preppy Kitchen. The videos are excellent - cover putting the recipes together perfectly and you get interesting conversation as well. The recipes are great. I’ve had to tweak a few of them, but nothing extensive. I was watching one layer cake video where the cake layer slid right off the plate as it was being moved to join the rest of the cake. So funny, and his reaction was perfect. These are the best, and you’ll learn a lot from watching them.

    Made these for my house - they were a hit. I did disregard the tip for dipping the knife in hot water, I won’t make that mistake again. I wish I had listened, as it was rough in my hands cutting them (I used my deep freeze and they were firm)
    I used vanilla ice cream and added mint to the cookie part. We loved them.

    I'm sure these ICS are wonderful, but my childhood memory of this treat is that the chocolate cookie had a crispness to it, which added a lovely contrast to the smooth ice cream inside. None of the commercial variety sold these days has this texture, at least that I have found.

    I just might try this out soon! I love making slab cookies, mostly because I'm lazy about scooping them out into perfect little portions and all I have to do afterwards is use a pizza cutter to slice and dice. My straight chocolate cookies don't ever turn out right since I always manage to either over or underbake them by a hair, so here's to hoping I don't screw this cookie recipe up!

    That was clever and unexpected. They look good. I remember Woolworth's used to have a Neapolitan ice cream sandwich made with slabs of the lightly tanned ice cream waffle "cone". Would you do a recipe on that?

    Hi,John.all I need to use is the coco mixer. I have a round ice cream pan. for making round ones, and I should have the recipe for making the chocolate mixture. I better get this going, ! I've been eating Bryers vanilla ice cream, but I have a lot left. my niece's 9 old would love doing this with me this afternoon when he comes home from school. 😅

    For both the cookie and ice cream you can place the material in a large ziplock freezer bag (1 or 2 gallon size) and press into the shape of the bag. Then cut away the edges and peel the bag away. You’ll have uniform pieces to work with.

      @@jaycarver4886 if you end up making croissants I also use this method to shape the pad of butter that gets folded into the dough.
      I made a similar recipe to this and spritzed the bag for the dough with a little PAM, the ice cream released from the plastic bag easily the dough needed a little help.

    Have you tried making them with rice crispy treats? I used to make these for my daughter with the fruity pebbles. I just made rice crispy treats out of the fruity pebbles and made the ice cream sandwiches. She would bounce off the walls all day. I like them with your "sandwich"

    Recently, I have had baking powder rocks, so I always sift it now. (Shhh, I never used to.) Those rocks can make the best pancakes awful. Everything you make looks wonderful! :)

      I had trouble with the top cookie layer breaking as I transferred it to the ice cream, but I made it work, pieces and all. My friends thought they were delicious- I'll probably have to make them every summer now.

    1 pint any flavor ice cream
    1 cup coca powder
    1 cup all purpose flour
    half teaspoon of salt
    half teaspoon baking powder
    1 and a quarter cup unsalted room temp butter
    one and a quarter cup granulated sugar
    2 eggs
    1 tablespoon vanilla extract

    Looks wonderful. Can you use black cocoa powder instead of regular cocoa to give it a richer color?

    I just caught a blooper. Just after sifting I was looking behind John for his cookbook on the counter, when he started whisking, poof they magically appeared. Humm John, the Magic Chef...lol
