This is largely because most Indian songs are based on the two schools of Indian classical music that each have a history of thousands of years; the Hindustani classical system and Carnatic system. While the former is more popular because it is what most hindi songs are based on, the latter is perhaps an older, more intricate system of Indian classical singing that originated in the south and had very little external influence unlike Hindustani classical that was influenced heavily by Persian music. In fact, when most people say "indian music" or indian classical, they are referring to the Hindustani school of singing because it has just become so mainstream. I'll try and find good, short recordings of incredibly sung songs based on the Carnatic system for you to react. In the meantime, perhaps you should check out "yaad piyaa ki aaye" by ustad Rashid Khan which is another rendition based on hidustani classical. Ustad Rashid Khan is one of the best exponents of this style of singing today.
