Chocolate Truffles Recipe

- Chocolate truffles are very easy to make. You can let your imagination go wild with the flavours and coatings!
Ingredients
For dark chocolate truffles
300 g (10 oz) plain chocolate (minimum 70% cocoa solids)
300 ml (10 fl oz) double cream or condensed milk
For milk or white chocolate truffles
300 g (10 oz) milk or white chocolate
150 ml (5 fl oz) double cream or condensed milk
Possible Flavourings
Orange zest
Mint essence
Coffee essence
Possible Coatings
Cocoa powder
100 g (3½ oz) melted milk chocolate
Crushed pistachios
Crushed almonds
Grated coconut
Sugar strands of various forms
Instructions
Break the chocolate up into small pieces. A food processor is a good option for this. Place the pieces in a bowl.
Bring the cream gently to the boil with stirring in a saucepan. Just as it comes to the boil pour it over the chocolate. Mix well.
Split the mixture into as many portions as you want flavours. Add flavouring to each portion and mix well. Place in the ‘fridge for 2-3 hours to allow the ganache to set.
Using either a melon-baller or a teaspoon, scoop out pieces of the hardened ganache, roll them into balls and place on some greaseproof paper.
To coat the outsides you can dust them with cocoa powder or roll them in chopped nuts, for example. For chocolate-covered truffles melt some chocolate in a bowl above a pan of boiling water, put a truffle on a cocktail stick, then spoon the chocolate over the truffle. Place on some greaseproof paper to set.
Titli's Tips
Don’t worry if your ganache separates. Once the liquid on the top starts to set whisk it firmly into the mixture.
Don’t handle the truffles more than you need to. Place them in the ‘fridge from time to time if they start to get a bit soft.
These are best stored in the ‘fridge, but they freeze well for up to a month.

Made these as favours for my daughters wedding, coated variously in coconut, chopped almonds, chopped roasted hazelnuts, and cocoa powder.....bagged up in cellophane, tied with ribbon...they looked fabulous and went down a treat. Thanks Titli.

I just love watching your videos Titli, you crack me up every time. I'm sure you know this already Titli (therefore please feel free to ignore the rest of this waffle, teehee) so this is just a quick tip for anyone who doesn't know.... if you use proper dairy double cream, it won't split when the ganache starts to set. I think the reason this one does is because Emlea is a dairy cream substitute which contains vegetable oil amongst other ingredients. So the separation you are seeing is the oil in the Emlea cream. Dairy double cream will not have this issue.....just in case any newbies wanted to know. Gorgeous truffles Titli, they look absolutely scrumptious. "Woo whoo for you" had me in absolute kinks, lol. Thank you so much! I made truffles earlier today using another recipe (forgive me, Titlis Busy Kitchen) and I just left it in the fridge without a thought and I was so confused. I wondered if it was the orange reacting with the chocolate... but now I know :)
andrewpum Hi Andrew. You are very welcome, I'm glad my little tip helped you out. I personally would never use Emlea for any recipe....as there's nothing quite like the real thing. But I understand that some people can't use proper dairy double cream or maybe just don't like it (heaven forbid, lol). The one and only time I ever used Emlea, I found the results very greasy, I assume from the vegetable oil. So its proper double cream all the way for me now, lol. Lee :)
+Crafty Loops really glad i read your tip! i've seen lots of Ganache videos and i was confused as to why it was separated, glad to learn you need to use specific cream! what cream would you recommend? i've used asda's double cream in the past to make a ganache for cakes, but if there is something better i'd like to know :) thanks!
+Bryony Rogers Hi Bryony, I'm glad my tip was able to help. Double cream and whipping cream, either one is perfect for ganache. Single cream is not great, there just isn't enough fat in it (I know that probably sounds gross when talking about lucious ganache, lol). But the cream needs to have at least 30-35% upwards of fat content in it. So the Double cream from Asda will be perfect. Whipping cream is also great too if you can't find double cream. I personally use whipping cream but that's because its always available when I go shopping and any cream left over I just whip and have it with some meringues and fruit. Hope that was helpful. Lee x

these are absolutely delicious ! The texture is so soft and melts in your mouth ! Next time, however, I think I'll use 150 ml of condensed milk and 150 ml of cream instead of all cream as I did just now; I find them a little bit on the chocolaty side and they are a bit soft. How long can I keep them in the fridge? I'd like to serve them for new year's eve, do I need to keep them in the freezer until then?

I tried it with dark chocolate and it worked really well, the other batch I made was with white chocolate, but I guess white chocolate contain too much fat themselves for the ganache to harden properly. so I filled the custard-like thing I got into aluminium foil chocolate wrapping thingys (the ones that look like little muffin thingys). You can eat it straight out of there, tastes lovely!

I made the truffles last week for my boyfriend, in a cute little box like yours :). They came out delicious! @BlackWolf4830 No. There is more fat in milk chocolate so you need to add less fat to make it soft.

Just a few questions...1. When you use chocolate in this or any other recipe can I assume you are always using cooking chocolate? 2. Can you explain why chocolate that you buy to eat can't work, I've always wondered that! 3. Can you use chocolate that is only 52% cocoa solids? 4. Can you use drinking chocolate powder to coat the truffles? 5. Why do most chocolate recipes call for plain chocolate and not milk chocolate?

Hi Titli... lovely recipe. You've said that instead of the cream we can use condensed milk. Do i follow the same boiling in the pan procedure for the condensed milk or it can be used directly. Also if i need to boil the condensed milk , do i dilute it a little first?

You should still be able to rescue these by adding more chocolate (melt ganache gently!)
You have save my day! I started making french macarrons, but I did something wrong and all the macarrons looked cracked! Anyway I also made ganache for stuffing the macarrons... Since the macarrons didn't go well, long story short. Th dessert for this dinner were chocolate truffles! Hi from Mexico!

If it's not solid now it never will be :-/ What chocolate did you use (and what brand)? In the past I've been caught out by buying something that looked like cooking chocolate but on closer inspection was meant to be used for cake decoration.

It depends how much you add! If you add a tsp or two for flavour then no adjustment is necessary

It depends where you live! You could always pop them in the fridge for a few hours then take them to school wrapped in bubblewrap or lots of newspaper.

I used simple milk chocolate and simple white chocolate, both crushed to little bits. I believe it's the fault of the cream. Because your recipe asks for double cream, but I used "regular cream" (can't get double cream in Germany).

Once added the different coatings on the truffles can you add them directly into the small cases, less washing up :) Or do they need to cool down from handling again?

Hey, you can just use heavy whipped cream (i've used them in recipes like eclair or cream puffs and they turn out just fine)
Can i store truffles at room temperature or should i give them in refrigerator? And one more question- if i use white or milk choclet then i need only 150ml cream?

Lol, this is what I did when I tried making a chocolate ganache for my sister's birthday cake... but the ganache went kind of wrong and separated and solidified, like in the video, in the fridge rather than being gooey and ganache-like. Then my mum gave me the idea of making truffles instead of chucking it. Was awesome. Tried making the ganache again and it went normal, so have no idea what went wrong with the first batch! lol! Aw well. Got some truffles out of it :)
