      I can get my daughter to clean the kitchen and detail my car if I made her that one. 🤔 I love to add coffee and cinnamon to chocolate it takes it next level for sure. Sea salt on brownies is a brilliant idea. Thank you.

    In many recipes, chocolate is melted on a water bath and for me brownie has no texture this way. When you put chocolate pieces, the taste is completely different. Then it becomes super fudgy and I love how you find little and satisfyingly melting chocolate drops while eating!

    Mimo's explanations of the WHY of recipe choices are really helpful. I've never made brownies, but this makes me want to try. (Maybe Mexican brownies with a little red chili. ;) )

    Just finished the 4 hour brownies. I’m not that big of a baker but I wanted to give it a shot. It wasn’t all that hard. The worst part was how much of a mess I made. They taste amazing and are worth the effort.

    I like to use 2 types of chocolate when making brownies, milk chocolate and dark chocolate. It gives it a bit of an extra taste and it also makes it taste sweet but also not too sweet, perfect balance.

    So useful to see the distinction in recipes and ingredients, and surprised that quickie version uses no flour! The only thing I might add is chopped walnuts sprinkled on the top (that way, they get toasted).

    In the comments section of a previous video, I politely requested more demonstrations by Mimo, and you delivered! I do enjoy her presence at any capacity in your cooking videos, but when she's at the helm, she shines the brightest. Thank you. Maybe you can develop a concept for her to have her own cooking show. Perhaps even more of these dishes at different preparation times. She's articulate, capable, knowledgeable, and has enough personality to keep instructional videos light and entertaining. Quite an asset to your team.

    Ingredients
    for 8 servings
    nonstick cooking spray, for greasing
    1 cup unsalted butter (230 g)
    1 ¼ cups granulated sugar (250 g)
    1 cup dark brown sugar (200 g), packed
    4 large eggs, room temperature
    2 oz freshly brewed espresso (60 g)
    ¼ cup vegetable oil (60 mL)
    1 tablespoon pure vanilla extract
    1 ¼ cups all purpose flour (155 g)
    1 cup unsweetened cocoa powder (120 g)
    1 teaspoon baking powder
    1 teaspoon kosher salt
    6 oz semi sweet chocolate (175 g)
    4 oz milk and semisweet chocolate feves (110 g)
    flaky sea salt, for sprinkling
    Method:
    Line an 8 x 12-inch baking dish with parchment paper. Grease lightly with nonstick spray.
    In a medium skillet, melt the butter over low heat, stirring occasionally, until it foams and turns light brown in color, about 10 minutes. Remove the pan from the heat and immediately transfer the browned butter to a liquid measuring cup or bowl.
    In a large bowl, whisk together the granulated and brown sugars. Pour the browned butter into the bowl with the sugars and whisk to combine. Set aside to cool.
    To the bowl with the butter and sugar, add the eggs, one at a time and mix using an electric hand mixer on medium speed until well-combined. Continue beating until eggs are fully incorporated and the mixture has lightened in color, 2½-3 minutes total. Add the espresso, vegetable oil, and vanilla and mix until combined.
    In a medium bowl, sift together the flour, cocoa powder, and baking powder. Whisk in the kosher salt.
    Gently fold the dry ingredients into the wet ingredients with a rubber spatula until nearly combined.
    On a cutting board, mix together the semisweet and milk chocolate. Roughly chop. Reserve ¼ cup of the larger pieces of chocolate, then fold the remaining chocolate into the brownie batter.
    Pour the brownie batter into the prepared pan and smooth in an even layer with an offset spatula. Sprinkle the reserved chocolate pieces on top.
    Refrigerate for at least 2 hours, or up to overnight.
    When ready to bake, preheat the oven to 350°F (180°C).
    Bake the brownies for 35-40 minutes, until the top is shiny and the brownies are set. Remove from the oven.
    Let cool in the pan for 30 minutes, then carefully lift the parchment paper to remove the brownies from the pan. Let cool completely, another 20-30 minutes, then sprinkle with flaky salt and slice into 8 pieces.
    This is for the 4 hour brownies!!!

    40 minute brownie
    Ingredients
    for 9 brownies
    nonstick cooking spray, for greasing
    1 cup all purpose flour (125 g)
    ½ cup unsweetened cocoa powder (65 g)
    ½ teaspoon baking powder
    3 large eggs
    1 ½ cups granulated sugar (250 g)
    1 ½ sticks unsalted butter, melted
    ½ teaspoon kosher salt
    ½ cup semisweet chocolate chips (87 g)
    Preparation
    Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper. Grease lightly with nonstick spray.
    In a medium bowl, sift together the flour, cocoa powder, and baking powder.
    In a large bowl, whisk together the eggs and sugar until well-combined, about 30 seconds.
    While whisking constantly, gradually pour the melted butter into the egg mixture until completely combined. Whisk in the salt.
    Add the dry ingredients to the wet ingredients. Use a rubber spatula to fold until just combined. Do not overmix the batter; stop stirring when you see the last trace of dry ingredients. Fold in the chocolate chips.
    Scrape the batter into the prepared baking dish and smooth the top.
    Bake the brownies for 25-30 minutes, or until the edges are firm and the top is shiny and slightly cracked. Let cool completely.
    Slice into 9 squares.
    4 minute brownies
    Ingredients
    for 2 servings
    nonstick cooking spray, for greasing
    2 tablespoons unsalted butter
    4 tablespoons mini semisweet chocolate chips, divided
    1 tablespoon sugar
    1 large egg
    2 tablespoons unsweetened cocoa powder
    Preparation
    Grease a 6 x 3-inch microwave-safe glass container with nonstick spray. Line with parchment paper.
    In a medium, microwave-safe bowl, combine the butter and 2 tablespoons of the chocolate chips. Microwave on high power until melted, about 30 seconds.
    Whisk the melted butter and chocolate until smooth, then add the sugar and egg and whisk to combine. Sift in the cocoa powder and stir with a rubber spatula to incorporate. Fold in some of the remaining 2 tablespoons of chocolate chips, reserving a few for topping.
    Pour the batter into the prepared container and smooth in an even layer with an offset spatula or the back of a spoon. Sprinkle the reserved chocolate chips on top.
    Microwave on high power for 2 minutes, until batter is set and the chocolate chips on top have melted.
    Serve immediately.

    Edit: i recommend doing the 4 hour one takes long but it is worth it hope this helped i just i just had to!

    I’m not a baker so can someone tell me if it’s safe to consume microwaved brownie batter with a raw stirred egg as an ingredient, for 2 min?

      Yes, unless you have a compromised immune system or have eggs from a questionable source, eggs are most likely safe to be consumed raw, so the time spent in the microwave would definitely cook it enough if you are worried about that type of thing.

    My brownie recipe tends to be a mix of the 40 min and 4 hrs one lol but still only takes 40 mins thankfully, the 4 hour one looks yum but nit quite my taste i have a very sweet tooth the brown butter and the sea salt and the espresso would put me off lol i also use regular chocolate chips because im fine with my stuff having no balance and being sickly sweet 🤣

    WOW those brownies look good... you know what would make them EVEN BETTER???? Having the actual measurements for the darn recipes... we got Ingredients, temperature and cook time but no measurement... so I can't recreate those brownies cause I got to GUESS how much flour versus butter and cocoa butter I need. It's so frustrating to watch
