I love these videos. First off I want her as my mom/grandma, second I love how she doesn't try to be anything but herself. She makes good food and she is practical for us busy moms. I made your recipe using a large, soft- cooked and drained cauliflower in place of the pasta and a couple of T. of starch (arrowroot or cornstarch or what-have-you) added in to prevent it being watery. The result was wonderful. It was great also with only 8 oz EXTRA sharp cheddar cheese and a half cup of parmesan romano added. You'll laugh, but I didn't add Quite that much butter either! You know what - it's still absolutely scrumptious! So, if you ever want to make a good cauliflower casserole or need to cook low carb, this is what I'd recommend. It was a total success. Thank you again. I love hanging out with you as you cook.
I made this recipe yesterday afternoon. It was easy and when I put it all together I thought oh this isn’t going to work it’s too soupy well 15 minutes later it worked out really well and it is delicious and I want to say I had it again tonight as a side And it’s better the second day. It’s the most delicate and cheesy macaroni and cheese I’ve ever had and the people that ate with me thought it was the best day it ever eaten. That Kraft mac-n-cheese box she was holding, is my daughter's favorite kids' box of macaroni and cheese. But we also use the "adult" boxes of macaroni and cheese, which is a large fat shaped box, with a foil pouch of thick soft liquid type cheese, instead of the packet of dry powder cheese substitute, found in that kid's box that MeMe was holding up. If you want to make your own macaroni and cheese, just get a bag of elbow macaroni, cook it, and add melted Velvitta cheese, mixed with grated chedder cheese. That is by far, the best tasting method.

I never wrote down my Mom’s Mac & Cheese recipe and have been googling for years to try to find one like it. Yours is almost spot on. I’m not a fan of the gooey typical Mac & Cheese everyone else seems to like; this old fashioned baked casserole version is the BEST in my opinion. The only thing she did differently was she used just standard elbow noodles and no pkt of the dry cheese flavoring. She also diced her cheese so it made melty pockets throughout the casserole. I should have known you’d be the one who would have the recipe I’ve been searching for. She grew up in Ala and was an excellent southern cook just like you are. Thank you for this recipe 😗👌🏼👩🏻🍳

I think the presbredded has some kind of a coating on it and it never melts right. It’s almost like the oil separates and it’s not smooth. Im glad i found your channel this week. Im going to try this, it looks so good.

You kind of shocked me using a box of Kraft dinner macaroni to start with but the recipe looked so good! I never buy preshredded cheese either, shredding your own is so much tastier.
The better cheese to use would be Sargento. I say that because it has less oil than most of the other cheeses. I have cooked almost all my life. I'm 73 and started when I was 15. About 15 years ago I took a part time job at a pizza place. The owner used only Sargento cheese. I asked the why and this was the answer. Cheaper cheeses have far more oil in them. All cheese needs some oil but your cheaper brands have far more. I could see the oil in this dish. Just recently a friend asked me to make her a sausage, egg, cheese and biscuit casserole and she furnished the ingredients. I did mention that if she skimped on the cheese it wouldn't turn out well. She purchased cheap cheese and it wasn't very good. It was floating in oil from the cheese. Yes, the biscuits did soak up some but since the cheese was stirred in with the egg mixture - let's just say it wasn't good. I had given her some of what I make. She was having guest in and this would be their breakfast. I made it up the night before, except for the biscuits and she added those just before baking. She called me and said i wasn't as good as mine. I asked her if she remembered our conversation about the cheese. She said she thought one cheese was as good as another. This was a valuable lesson learned the hard way. I made the biscuits and froze those and she took those out just before going to bed and put them in the fridge. I do enjoy your videos. That is a lot of work. I live alone now but I still cook for church functions and I have a a very dear friend and his wife tells me any time I feel like cooking come right on over and do so. I lived with them for 1 1/2 years waiting for my new apartment. I made dinner 5 nights a week. She has a kitchen to die for. During the holidays I go over and we make ALL the holiday treats.

My mother always made her Macaroni and Cheese with eggs, milk, lots of cheese and elbow macaroni. She didn't use the boxed brands at all. She also didn't add a stick of butter just greased the baking dish with it. I still use her recipe to this day it's my favorite way to make mac and cheese.

Looks delicious. I have a short easy recipe for you. Spinach,Artichoke chicken. 3 ingredients Rottisuree chicken walmart or sams club also a tub of spinach artichoke dip, 1/2 & 1/2. Cut up chicken about 3 cups, add small tube of dip from Walmart (sams club sells the big one). In mixing bowl add chicken and tube of dip mix well add 1/2 cup of 1/2 & 1/2, mix well microwave 3 minutes pour over instant mashed potatoes. Easy, fast, delicious filling to for MOMS on the go please try it a big hit.

Okay, I made the mac n' cheese. I have your cookbook and re-watched the video before I attempted to make it. The only thing I did differently from your recipe, is that I added a bit of ham to it. Not enough to over power the taste of the mac n' cheese, and not enough to have ham in every mouthful...but just enough. It came out perfectly. Very light, not dense like other mac 'n' cheese's I've tasted. It was very airy and light, almost like a souffle. I will definitely make this meal again. Thank you, MeMe!

As someone from "the South" I find that our Cuisine varies greatly depending on what region of the South you are in. Food in the Carolinas has always been vastly different than it was in Tennessee and Alabama for example.
@brookeguenther4909 This recipe is just all wrong. The egg's purpose is to firm the dish up and it's not firm. So there is either too much milk or not enough eggs. That isn't just a difference between regions. It's science. And let's not forget, this isn't a real recipe. She thought she could use a box of Kraft instead of just boiling some macaroni. I don't see where she saved herself any time.

Spinach,Artichoke chicken.
3 ingredients
Rottisuree chicken walmart or sams club also a tub of spinach artichoke dip, 1/2 & 1/2.
Cut up chicken about 3 cups, add small tube of dip from Walmart (sams club sells the big one). In mixing bowl add chicken and tube of dip mix well add 1/2 cup of 1/2 & 1/2, mix well microwave 3 minutes pour over instant mashed potatoes. Easy, fast, delicious filling to for MOMS on the go please try it a big hit.

Okay, I made the mac n' cheese. I have your cookbook and re-watched the video before I attempted to make it. The only thing I did differently from your recipe, is that I added a bit of ham to it. Not enough to over power the taste of the mac n' cheese, and not enough to have ham in every mouthful...but just enough. It came out perfectly. Very light, not dense like other mac 'n' cheese's I've tasted. It was very airy and light, almost like a souffle. I will definitely make this meal again. Thank you, MeMe!

4 eggs and 3 cups of milk for one box of Kraft? It looks like it came out really wet. Southern Mac n cheese is supposed to be firm.
As someone from "the South" I find that our Cuisine varies greatly depending on what region of the South you are in. Food in the Carolinas has always been vastly different than it was in Tennessee and Alabama for example.
@brookeguenther4909 This recipe is just all wrong. The egg's purpose is to firm the dish up and it's not firm. So there is either too much milk or not enough eggs. That isn't just a difference between regions. It's science. And let's not forget, this isn't a real recipe. She thought she could use a box of Kraft instead of just boiling some macaroni. I don't see where she saved herself any time.
