Good video, I have been ocean fishing off south Florida for over 50 years and caught many many Blackfins. First I ever heard about the “ Collar Meat”, you never stop learning, thx

And for a fish shop, we sold that in a jar or covered tray, however it does not count as yield and that loin price goes up.
People love to think fillet prices are based on labour of filleter and what what. but its the yield that affects the price per weight of a fish fillet price
Some people proud themself for fastest filleter in work or what what ever, and forgot that its the balance between how fast you can get things done, but also the yield you've done on a fish. And you'd be wondering why skinless fillet seem to be more pricier

You left a ton of meat on the carcass. One suggestion, treat the knife like a knife and not a saw. Smooth easy strokes instead of the sawing action will result in cleaner cuts.
I came here for consolation after I just had to fillet a good tuna at a friend's house with a knife that was as sharp as your best spoon...

This time you save the collar, great!
But, you may remove the collar still attached to the ventral section ("Ventresca" in Castillian/Spanish) and cook alltogheteher flatten at oven for example...
The ventral section ("Ventresca", again) is in most of the cases one of the best parts, getting rid of it is a pity.
In most US style cleaning, it ends at the sea bottom or trash can, a true shame...

Was this fish bled while it was still alive? Wondering how much different the inside meat would look if it was bled.

@Imbored4 apparently you can bleed the fish as soon as you catch it, and the resulting meat quality will be different.
