Strawberry Mousse with Joconde Sponge Recipe

- This is a light dessert in a glass filled with Strawberry mousse and Joconde sponge. Joconde sponge is a sponge cake made with ground almonds. Joconde sponge is so highly regarded by pastry chefs in France that it is named after the Mona Lisa. La Joconde means Mona Lisa in French. I love this sponge cake. It is so easy to bake and it is yummy!

Ingredients for 6 servings (6 oz/ 177 ml glass)
Joconde Sponge (Biscuit Joconde)
¾ cup (80 g) almond flour
½ cup (63 g) powdered sugar
2.5 tablespoons (25 g) all-purpose flour
2 eggs (100 g)
1 tablespoon melted butter
3 egg whites
1 tablespoon sugar
Baking pan size: 10 x 15 inches
1. Preheat the oven to 450°F (230°C). Line the parchment paper inside a baking pan.
2. Sift the dry ingredients (almond flour, all-purpose flour, sugar) into a bowl and set aside.
3. In another bowl, beat the eggs. Slowly add the dry ingredient and mix until the mixture is smooth. Add melted butter and set aside.
4. In another clean bowl with clean mixer, whip the egg whites to 1 minute. Add sugar and continue to whip until firm/ stiff peaks.
5. Gently fold the two mixtures together. Do not overmix or break up the air in the batter. You need it for baking since there is no baking powder used.
6. Pour the batter on the baking sheet and spread it evenly with a spatula.
7. Bake for 8-9 minutes when the edges are lightly brown. Do not overbake.
8. Transfer the cake to wire rack to cool for 10 minutes. Flip it around to peel off the parchment paper, flip it back. Let it completely cool down before cutting the cakes.
Strawberry Mousse
1 cup whipping cream
4 g gold gelatin sheets (2 sheets)
1 cup strawberry puree (strained)
3 tablespoons sugar
Glaze for 6 glasses (3 tablespoons strawberry jam and 1 tablespoon water)
Additional strawberry to decorate the glass and garnish
1. Whip the heavy whipping cream and set aside in the fridge.
2. Soak the gelatin in a bowl of cold water.
3. Heat the strawberry puree and sugar in a saucepan. Bring to a boil and remove from heat.
4. Squeeze excess water from gelatin and stir in.
5. Cool down to room temperature. Gently fold the strawberry puree and whipped cream together with a spatula.
6. Pipe or spoon into the prepared glass and chill in the fridge for a few hours until the mousse is set. Please see video how to put the ingredients together.
7. For the glaze, microwave strawberry jam and water in a bowl. Spoon the glaze on top of the cake. Decorate sliced strawberry on top of the glass.
8. Serve and enjoy.
* 1 cup is about 237 ml in liquid volume
