Lemon Muffins with Chia Seeds
Try these delicious and healthy lemon muffins! Yum 💖
INGREDIENTS for 6 pcs standard size
Dry ingredients:
1.25 cups (170 g) cake flour or all-purpose flour
1 teaspoon (4 g) baking powder
Pinch of salt (about 1/16 teaspoon)
Wet ingredients:
1 tablespoon chia seeds
2.5 tablespoons water
1 large (50 g) egg
2/3 cup (135 g) sugar
3 oz (90 ml) coconut oil/ vegetable oil
1/2 cup (120 ml) milk
Zest of 1 large lemon
1 tablespoon fresh lemon juice
Icing (optional):
1/3 cup (40 g) powdered sugar
2-3 teaspoons milk (add slowly)
Chopped nuts (optional)

DIRECTIONS:
1. Preheat the oven.
2. Mix the chia seeds and water together. Set aside for 10 minutes.
3. In a bowl, combine eggs, sugar, oil, milk, and whisk until combined.
4. Sift in the flour, baking powder, salt and whisk until combined. Do not overmix.
5. Add lemon zest, lemon juice and soaked chia seeds. Fold the ingredients together.
6. Scoop the batter into the baking pan. You should have enough batter for 6 muffins. I use Wilton standard cupcakes pan (6 cavities).
7. Bake at 375°F (190°C) for 20-23 minutes until toothpick inserted comes out clean.
8. Remove from oven. Transfer to cooling rack to completely cool down.
9. In a small bowl, mix the powdered sugar and milk together and stir until combined. Drizzle on top of cool muffins and then scatter with some chopped nuts. (Note: If you like thicker icing, use less milk)
10. Serve and enjoy!
Note: You can substitute the chia gels with one egg if you don’t like the chia seeds.

Greek yogurt only has this insane amount of protein in the US. Most other places it has about 4,5g of protein. And there's different fat variations, the lowest being 2%, around 6% from sheep and the most common one is 10% where I live

Does it have to be soaked over night? Cant you drink it right away or what happens
The soaking process makes the chia seeds easier to digest and helps your body absorb more nutrients. Yes, an hour should be okay but the longer you soak (overnight) is better. Not soaking chia seeds can lead to digestive issues. If you eat dry chia seeds without liquid, they can form a mass in your digestive tract and get stuck.
