Sunken scrolls state inklings have a full skeletal structure made of flexible cartilage and very good adapted eye sight after hundreds (because of RNA) of years of evolution.
Octolings are the same, but reproductive systems are different, where as inkings have sexual intercourse, while octolings cut of tentacles from their head and grow it.
The reason they evolved into bipeds that can switch between forms was because a nuclear bomb was launched at a base in Antarctic during WWV (World War 5), melting all of the ice there, causing tsunamis and flooding. The acidity of sea water was now that of tomato juice, so cephalopods decided to NOT die and evolved to live on land, giving them a natural weakness to water.

@@mlle_bug I’m not sure, I honestly think that Inklings began shifting to swimming in there ink much more then swimming in the see since salmonoid attack, to the point where they shrivel and die in the water before salmonoids can get to them because how sensitive they grew. Or the water in turf wars and salmon run are more harsh then waters like New Albacore and Mahi Mahi Resort. ((That was all head canons lol))

The actual lore is explained in the "The Art of Splatoon: The book with splattitude" shows that on page 313 it says the world ended due to somebody launching a nuclear missile at the South Pole, as seen here "During the last war, someone from somewhere launched a nuclear warhead into the South Pole." The reasoning behind that is because there were 3 more world wars and on the fifth one is when humanity went extinct as shown earlier on the same page. Quote "Mankind's violent nature resulted in many civil wars and five great world wars."

I mean, it literally says it in the game that they evolved from squids, but some extra scientific evidence is nice.
The only problem is that if you look into any of his sources (even the octopodes video), they all claim things in contrast to his arguments.
For example, the paper he shows on screen claims that these RNA editing structures may make evolution take longer.

legit when I first read that bit of lore my first thought was “matpat was right!”
Not for exactly the right reason tho, its not their rng editing or whatever that allowed them to evolve quickly, its the weird human mind reading crystals in the water, well, and maybe a little bit of the rna thing
