Chicken Adobo in Coconut Milk

  • Everyone has their own version of cooking their favorite dish. In this video I have my version on how to make Chicken Adobo in Coconut Milk. It's a delicious classic Filipino dish. Please watch my easy-to-follow video and I hope you give it a try, guys!
    INGREDIENTS
    1 kg chicken legs or any chicken pieces
    4 tbsp oil
    6 cloves garlic, chopped
    1 medium onion, chopped
    1/3 cup soy sauce
    1 tsp peppercorn
    2 pcs dried bay leaves
    1/4 cup vinegar
    1 can (400 ml) coconut milk or fresh
    2 pcs chili peppers (optional)
    Salt to taste
    PROCEDURE
    -Heat the oil in a large skillet over medium heat, sauté the garlic and onion. Add the chicken, cook each side for 2-3 minutes.
    -Add soy sauce, peppercorn, bay leaves, stir to mix then add the vinegar, cook for 10-15 minutes.
    -Add coconut milk, cover and cook over medium-high heat, for 30 minutes or until sauce is reduced. Stirring occasionally.
    -Add the chili peppers, lower the heat and simmer for a few more minutes until the sauce thickens.
    -Place on a serving plate, serve hot with steamed rice.
