If I remember hearing correctly, the spooky dream fight was originally the second phase of The Devil, but the phase was scrapped during development. I imagine the stop-motion rock devil in the background would have transitioned into the giant Devil head in the final phase.
Yeah, it was confirmed that the devil skeleton was going to be in the unused phase 2, and would've transformed into the alive giant devil we know. There is a finished but unused animation of him in his normal giant form opening his eyes, grinning, and then lowering his hands in which the platforms would probably appear.
Damn that’s actually a really smooth transition. It goes from his skeleton jumping out of his skin, becoming massive as you jump through the hole after him then becoming flesh and blood after absorbing the devil and angel into itself. Shame it didn’t work out

Just saying that the ground pound move you're talking about could also very well be a reference to Frost Man from Mega Man 8, since both are big hulking snowmen who attack the ground in that exact same way for their Ice Wave attack. I am right there with you regarding the inanimate object thing. I vividly remember being like 5-6 at an IHOP and getting a stack of those pancakes that have a smile on them, and I was unable to eat them because it looked too happy. Even after my dad smudged up the face it still took a lot of tears and disassociating to be able to eat it. And yes, I watched Toy Story 1 & 2 countless times by that point which did not help in the slightest.

relating to the food discussion, object personification is a pretty common thing with adhd/other neurodiv stuff, i.e. tendencies to treat inanimate objects kinda like people in some ways, so that might be where it comes from
