Love you and your videos. One thing I have found that has helped my cakes step up is spending time on my boards, I always cover the boards (with fondant, crumbs, and sugar...), ribbon around the edge, and feet ( easier to pick up help to protect the ribbon when picking up and everything looks better on a raised pedestal). Thank you for always being you and sharing everything good or bad.
I’m not a cake decorator, but polymer clay artist who makes mini foods & cakes….what heavily helps skill improvement is when artists, like yourself, show older work vs. newer work and what ideas led to the skill elevation. Great video ❤
I came across your videos just scrolling and have been hooked since. Thanks so much for your content. It sets you apart from the average creators because they dont go into detail like this. Your pricing video, filling video, buttercream recipe, the little details you add that usually you have to research on your own such as how many people each cake feeds or the sizes. I got my airbrush machine a few years ago. They had a good deal on Groupon on it. It was $30. Works great, very pleased with it. Its just a little unit, nothing fancy, but I don't make cakes for other people anymore.
I love that used your cakes to show the progress. My issue with my cakes is that no one that orders from me wants fondant. So, yes, they do make the cakes look crisper and cleaner, but if your customers don't want fondant, what are your suggestions to make them look better?
I let people know that some decorations must be made with fondant or it won't look right. And I explain that they can simply remove the decorations and then cut into the cake or just eat the cake and icing and leave the fondant on the plate. If people insist on no fondant, then I will either send pictures of examples of all-buttercream cakes that I can make or I will decline their order and send them elsewhere.

Thank you Lala! I would suggest trying to get good at one thing to start. Maybe you learn how to get the icing / fondant really smooth so you have a clean slate to decorate with. It comes with practice so be patient with yourself!
I was trained by Wilton back in like 1993 and have a hard time getting out of that mind set. Taught for a year and decided 1- it's not for me and 2- cake making/decorating wasn't fun any more 😐 Now only make cakes for friends and relatives who want a cake and I don't do anything fancy. I love your cakes and tutorials. Thanks for sharing your amazing designs! I know from experience how hard it is! 💚

I just stumbled upon you and I love love love loved this video! I'm definitely a very amateur Baker probably have only made about six cakes for a clients and or friends (some of them were pro bono), and maybe about another 10 cakes for our church charity functions. My flavors are on point but decorations are suffering LOL. I keep decorations very simple right now but have the desire to learn more. This video is super great and encouraging. Your cakes are beautiful!!

Very cool video - would love to see tips for making nicer cakes just with buttercream (try to avoid fondant for kids cakes since all three of mine dislike the flavor)
Thank you! I do make all-buttercream cakes, but mostly those are just basic textured buttercream designs. The fondant decorations do look much cleaner (at least for me). I usually recommend when they don't want fondant, that we do a simpler design and do minimal fondant decorations that can easily be peeled off the cake before it's cut! Most of my cakes are iced in buttercream and decorated with fondant. I personally don't like to eat fondant, so when I have a piece of cake, I just eat the cake and icing and leave the fondant on the plate. Some say that's wasteful. I liken it to garnish on your dinner plate. It makes it look pretty, but most people don't eat it!

Hi Karolyn! I feel like you and I are traveling the same road. So many similarities in our style, recipes and cake philosophy! ( I also dislike doing 3D figurines) I definitely have the same “past cakes.”
I can get a super smooth buttercream and nice tight edges. Can edges on a circle be tight? 🤔 oh well lol 😆 But I have caught myself missing cornstarch on fondant pieces and buttercream writing is hard! If I have the time I will just make the letters out of fondant. It’s more important to me that my product shows well. Ya never know who will be at the event your cake is for… could pay off with a high end order, expanded customer base, word of mouth is amazing…. Especially in a small rural town (sorry I had to put that r word in there) Love ya Karolyn, thanks for another amazing tutorial ❤
It's okay, I forgive you! 😂😂 And you're so right, you never know who will be at a party. Many of my repeat customers came from parties and word of mouth!
I’m glad you talked about these issues Karolyn. I just did a 49ers Cake where I got fatigued and frustrated because of Icing issues (😡🤬ask you about that in a sec)-so I just direct applied my icing sheet ‘bare’ to the icing. Now to the receiving client who may not know any better, don’t care etc…for them it’ll be OOooo’s & aahh’s. However, knowing what I CAN do…it reaaally bothered me cause I knew I should have prepared better and/or taken the time to give my 100%. In the end it was a a beautiful cake and they were extremely happy with it…when you know…you know. Especially when most all my techniques I’ve learned comes from Dr. Karolyn. All the encouragement I’ve gotten from … Dr. Karolyn KaKe. The Icing Headaches. I use your Icing recipe so first let me say that, THAT delicious sweetness 👉🏽I do not believe to be the problem. It’s either patience, handling knowledge and/or my application but PLEASE riddle me this. Why when it’s time for smoothing, this is where my inarticulate profanity develops suddenly, holding my breath while simultaneously breathing hard (figure that one out), healthy doses of ‘flatulence’, excessive hiccups, dry heaving and ANY OTHER anxiety or issue…comes for me. 🤨…because this happens👉🏽👉🏽 Why do I get these ‘pock-marked’ areas in my icing? I was about ready to give up ‘caking’ this weekend because it took me 3 tries/3 batches to get it ‘decent’. I felt like a failure. I used hot water (dipping my smoother) but it didn’t help. At times the icing seemed to get ‘rough’. Also, speaking of what I DON’T like to do which is full fondant cakes and (yes I understand it is cleaner lookin’)💁🏽♀️ can I successfully ‘float’ thinly rolled, 3D fondant pieces onto your AB? 👉🏽👉🏽WITHOUT waking in the morning and finding them having ‘slid’ down??? I tried the Fondant but I hate that people pretty much waste it after that horrible process of getting it on. Yes, I know how to MAKE…fondant and very well but…I just prefer to live on Buttercream Lane. Therefore, I need help with this issue. It’s probably hard for a ‘professional perfectionist’ like you to do a video on these issues showing the mistakes that can happen in smoothing-but maybe you know how to CREATE the actual mistakes and then HOW to correct them. Please. Please. PLLLLEASE help. Love you.❤
You may be whipping the icing too much after adding the sugar. I am going to try to figure out how to show this issue and how to correct it. I still get bubbles / pock marks in my icing. But I rely on my smoothing method to get most of them out. I wrote down your concerns and will work on getting a video out! I love "holding my breath and breathing hard"! I totally do that! 😂😂 If I'm putting 3D fondant pieces on the side of a cake, I will anchor them in with a toothpick on an angle pointing downward to help prevent it from sliding. If it's too heavy, you need more support!
Karolyn-that’s why I truly ADORE you. Seriously. We can count on you to be the Karolyn we know and love. Because you are willing to do whatever it takes to help us. I will definitely remember your tips on floating ‘fondant’ pieces and that makes me soooooo happy. Because your icing is awesome and people love the flavor. If I can get the smoothing process ‘aced’ - that’ll be half my battle. The rest is just time constraint for decorating and patience to perfection. I’m going to watch this again because it is extremely helpful. I have 2 major cakes coming up. My Missionary ordered a Bling Cake for her Birthday and I have a Graduation Cake coming both of which I’m whipping out your handy decoration guide. You’re cakes are beautiful and it sounds like you get so much creative freedom from your clients. How do you get this or ask for this? I get pictures and my clients are always pretty set on their cake being almost identical. It takes the fun out of making cakes especially because if there’s something I mess up on (a bubble etc) I can’t cover it or change the design if necessary to make the cake better. Is there something you say, or ask?
I have a few pictures of cakes I've done that are my renditions of a design I was given and I believe that my design looks a lot better. So I show the pictures of them (I have them saved as a 2 picture collage, the original on the left and mine on the right). If they agree that they like mine better, then they usually let me add my flair to it. I usually tell them that I don't like to copy other designs exactly and can draw inspiration from the pictures I'm given and it will be similar, not exact. And I've also told people that when my creativity is restricted that I never am satisfied with the outcome!
I think you could add boards and packaging. Cakes look much more professional on cake drums, sometimes decorated) and appropriately sized bakery boxes.
Hi Karolyn, thanks for another amazing video! As a GF Bakery owner in Schertz, Texas, you’ve answered my messages each time I ask and I really appreciate your help. It means more than you know. I 😂rewatched your video on cutting out fondant names this week when I was asked to do a Gucci cookie cake for a lady. I spent more time decorating the cake board and stenciling a Gucci symbol on that dog on thing than the cookie. I later found the sister was only willing to spend $50 after she told me how big and how many people to feed 🤦♀️😡, enough said and I’ve learned my lesson! You always have such beautiful designs for your cakes, but I have two questions, number one, how much time do you require customers give you when ordering a cake and second, although I’m new to making cakes (I only started out baking cookies and now I’m baking everything) I see you talk about how you love your edible images, but I hated the taste of the rice paper. Would you recommend I get one and, if so, which one would you endorse? Thanks again and keep up your amazing work!!
Donna! Did you start that Gucci cake before the order was confirmed? I have done that in the past. Now I won't even start a cake until it's PAID IN FULL. I have a policy...I collect a $50 deposit to hold the spot. (Some people do more, I just like to do $50 because it's enough to cover the cost of ingredients.) Then the cake must be paid in full 10 days prior to pickup / delivery or I won't make it. I go with 10 days because that's when I start shopping and I actually bake and freeze the cakes in advance. No changes can be made to the order within 10 days (because I already started on it!) With the edible images, I personally don't eat them. I'm sure kids may eat the decor, but I don't know if many adults do. I get all of my supplies from Icing Images. The icing sheets I use have a vanilla flavor to them, they aren't bad! Here's my link to their site, the products are high quality (you don't want to use cheap icing sheets that taste gross and / or break apart!) and the owner Debbie is a sweetheart. I have a question, Karolyn. For a cake like your “Home Sweet Home” cake, I guess I don’t quite understand how you would cut the same size slices from such different height tiers. The double barrel tier would make such huge, tall pieces. I love how it looks, btw. I just don’t understand how you would cut it.
The double barrel cake is a 2 tier cake (2 tiers of the same size) iced into 1 tall tier. So there is a cardboard circle 1/2 way down separating the 2 tiers and supports in the bottom tier to prevent it from collapsing. You can't cut from the top to the bottom! I let my customers know that when I make a cake like that. It's explained in my double barrel cake video!

I made the fondant in the same way that you made it, and I used to put SMC powder on it because I did not have it, but when I spread the dough, after a short time on a cake, it became like dry skin, like
What is SMC powder? I haven't heard of that. Usually when the fondant is too dry, you added too much powdered sugar or needed more water. The amount of water you need will always vary depending on the humidity outside. I don't always go by the recipe, I use that as a guide and go by the look and feel of the fondant!
I have been watching your videos for a while and saw one where you mentioned you got a new mic. Just observation, I don't think your mic is sourcing your audio. I think your camera is still the recording device because you get the slight echo of the room. Just as a tip to make your videos look more professional😉

Taught for a year and decided 1- it's not for me and 2- cake making/decorating wasn't fun any more 😐 Now only make cakes for friends and relatives who want a cake and I don't do anything fancy. i hv to say this that i love the colours and decorations including toppers, numbers names that you put on your cakes. Extremely lively cakes.. My request- please do videos on each of the type of decorations that you hv done and do. They are so amazingly bright and lively .

I just stumbled upon you and I love love love loved this video! I'm definitely a very amateur Baker probably have only made about six cakes for a clients and or friends (some of them were pro bono), and maybe about another 10 cakes for our church charity functions. My flavors are on point but decorations are suffering LOL. I keep decorations very simple right now but have the desire to learn more. This video is super great and encouraging. Very cool video - would love to see tips for making nicer cakes just with buttercream (try to avoid fondant for kids cakes since all three of mine dislike the flavor)
Thank you! I do make all-buttercream cakes, but mostly those are just basic textured buttercream designs. The fondant decorations do look much cleaner (at least for me). I usually recommend when they don't want fondant, that we do a simpler design and do minimal fondant decorations that can easily be peeled off the cake before it's cut! Most of my cakes are iced in buttercream and decorated with fondant. I personally don't like to eat fondant, so when I have a piece of cake, I just eat the cake and icing and leave the fondant on the plate. Some say that's wasteful. I liken it to garnish on your dinner plate. It makes it look pretty, but most people don't eat it!

I can get a super smooth buttercream and nice tight edges. Can edges on a circle be tight? 🤔 oh well lol 😆
But I have caught myself missing cornstarch on fondant pieces and buttercream writing is hard! If I have the time I will just make the letters out of fondant. It’s more important to me that my product shows well. Ya never know who will be at the event your cake is for… could pay off with a high end order, expanded customer base, word of mouth is amazing…. Especially in a small rural town (sorry I had to put that r word in there)

I just did a 49ers Cake where I got fatigued and frustrated because of Icing issues (😡🤬ask you about that in a sec)-so I just direct applied my icing sheet ‘bare’ to the icing.
Now to the receiving client who may not know any better, don’t care etc…for them it’ll be OOooo’s & aahh’s. However, knowing what I CAN do…it reaaally bothered me cause I knew I should have prepared better and/or taken the time to give my 100%.
In the end it was a a beautiful cake and they were extremely happy with it…when you know…you know.
Especially when most all my techniques I’ve learned comes from Dr. Karolyn. All the encouragement I’ve gotten from … Dr. Karolyn KaKe.
The Icing Headaches.
I use your Icing recipe so first let me say that, THAT delicious sweetness 👉🏽I do not believe to be the problem.
It’s either patience, handling knowledge and/or my application but PLEASE riddle me this.
Why when it’s time for smoothing, this is where my inarticulate profanity develops suddenly, holding my breath while simultaneously breathing hard (figure that one out), healthy doses of ‘flatulence’, excessive hiccups, dry heaving and ANY OTHER anxiety or issue…comes for me.
🤨…because this happens👉🏽👉🏽
Why do I get these ‘pock-marked’ areas in my icing? I was about ready to give up ‘caking’ this weekend because it took me 3 tries/3 batches to get it ‘decent’.
I felt like a failure. I used hot water (dipping my smoother) but it didn’t help. At times the icing seemed to get ‘rough’.
Also, speaking of what I DON’T like to do which is full fondant cakes and (yes I understand it is cleaner lookin’)💁🏽♀️ can I successfully ‘float’ thinly rolled, 3D fondant pieces onto your AB? 👉🏽👉🏽WITHOUT waking in the morning and finding them having ‘slid’ down???
I tried the Fondant but I hate that people pretty much waste it after that horrible process of getting it on.
Yes, I know how to MAKE…fondant and very well but…I just prefer to live on Buttercream Lane.
Therefore, I need help with this issue.
It’s probably hard for a ‘professional perfectionist’ like you to do a video on these issues showing the mistakes that can happen in smoothing-but maybe you know how to CREATE the actual mistakes and then HOW to correct them.

You may be whipping the icing too much after adding the sugar.
I am going to try to figure out how to show this issue and how to correct it. I still get bubbles / pock marks in my icing. But I rely on my smoothing method to get most of them out. I wrote down your concerns and will work on getting a video out!

If I'm putting 3D fondant pieces on the side of a cake, I will anchor them in with a toothpick on an angle pointing downward to help prevent it from sliding. If it's too heavy, you need more support!

I will definitely remember your tips on floating ‘fondant’ pieces and that makes me soooooo happy. Because your icing is awesome and people love the flavor.

You’re cakes are beautiful and it sounds like you get so much creative freedom from your clients. How do you get this or ask for this? I get pictures and my clients are always pretty set on their cake being almost identical. It takes the fun out of making cakes especially because if there’s something I mess up on (a bubble etc) I can’t cover it or change the design if necessary to make the cake better. Is there something you say, or ask?
I have a few pictures of cakes I've done that are my renditions of a design I was given and I believe that my design looks a lot better. So I show the pictures of them (I have them saved as a 2 picture collage, the original on the left and mine on the right). If they agree that they like mine better, then they usually let me add my flair to it.
I usually tell them that I don't like to copy other designs exactly and can draw inspiration from the pictures I'm given and it will be similar, not exact. And I've also told people that when my creativity is restricted that I never am satisfied with the outcome!

Hi Karolyn, thanks for another amazing video! As a GF Bakery owner in Schertz, Texas, you’ve answered my messages each time I ask and I really appreciate your help. It means more than you know. I 😂rewatched your video on cutting out fondant names this week when I was asked to do a Gucci cookie cake for a lady. I spent more time decorating the cake board and stenciling a Gucci symbol on that dog on thing than the cookie. I later found the sister was only willing to spend $50 after she told me how big and how many people to feed 🤦♀️😡, enough said and I’ve learned my lesson! You always have such beautiful designs for your cakes, but I have two questions, number one, how much time do you require customers give you when ordering a cake and second, although I’m new to making cakes (I only started out baking cookies and now I’m baking everything) I see you talk about how you love your edible images, but I hated the taste of the rice paper. Would you recommend I get one and, if so, which one would you endorse?

Donna! Did you start that Gucci cake before the order was confirmed? I have done that in the past. Now I won't even start a cake until it's PAID IN FULL. I have a policy...I collect a $50 deposit to hold the spot. (Some people do more, I just like to do $50 because it's enough to cover the cost of ingredients.) Then the cake must be paid in full 10 days prior to pickup / delivery or I won't make it. I go with 10 days because that's when I start shopping and I actually bake and freeze the cakes in advance. No changes can be made to the order within 10 days (because I already started on it!)
With the edible images, I personally don't eat them. I'm sure kids may eat the decor, but I don't know if many adults do. I get all of my supplies from Icing Images. The icing sheets I use have a vanilla flavor to them, they aren't bad!

I have a question, Karolyn. For a cake like your “Home Sweet Home” cake, I guess I don’t quite understand how you would cut the same size slices from such different height tiers. The double barrel tier would make such huge, tall pieces. I love how it looks, btw. I just don’t understand how you would cut it.
The double barrel cake is a 2 tier cake (2 tiers of the same size) iced into 1 tall tier. So there is a cardboard circle 1/2 way down separating the 2 tiers and supports in the bottom tier to prevent it from collapsing. You can't cut from the top to the bottom! I let my customers know that when I make a cake like that. It's explained in my double barrel cake video!

I made the fondant in the same way that you made it, and I used to put SMC powder on it because I did not have it, but when I spread the dough, after a short time on a cake, it became like dry skin, like
What is SMC powder? I haven't heard of that. Usually when the fondant is too dry, you added too much powdered sugar or needed more water.
The amount of water you need will always vary depending on the humidity outside. I don't always go by the recipe, I use that as a guide and go by the look and feel of the fondant!
You must have meant CMC powder? Did you not use that in the fondant you made? Because that really makes a difference!
I have been watching your videos for a while and saw one where you mentioned you got a new mic. Just observation, I don't think your mic is sourcing your audio. I think your camera is still the recording device because you get the slight echo of the room. Just as a tip to make your videos look more professional😉
