To me the biggest benefit when sitting is that I don't have to position my feet so accurately. No matter how you wiggle around on the bike you always find the footpegs. :D
but you should never have the arch of your foot on the peg unless you are preparing to or actively braking... always keep the ball of your foot on the peg! staying on the ball of your foot allows you to pivot your ankle for further movement and control of the bike (by maintaining a weightless position on the bike)
Yes, but I am so "weightless" on the bike that I move my feet all the time in different positions. And definitely don't want something hitting my heel while I do it. 😉

Are they lower because you no longer use the big thick rubber on the foot pegs?

I thought they were 15mm lower, not 1cm.
Maybe 15mm if you use the original rubber.
