Im sooo sending this to my mom for the holidays. She and my stepdad have blood sugar issues but he hates pumpkin so I'm gonna advise she tweak with applesauce or cherries for him. He's type 2 diabetic, she's prediabetic. I have reactive hypoglycemia so I also have blood sugar issues but I've got a few pumpkin recipes of my own I intend to try.

Alternatively, instead of baking just put it in creami pints and spin it on ice cream and you have pumpkin pie ice cream.
