If you want to get your crackers super thin and consistent you can always use a pasta maker! It gets the dough super thin and even! After you have the sheets of dough on your cookie sheet you can pre-cut the sizes by running a pizza cutter or another similar tool and make your crackers the shape and size you want. 😊

I just tossed a whole quart of sourdough discard because I cracked open the jar while trying to knock some starter off a metal iced teaspoon. I briefly thought of keeping it, but I didn't want to take the chance that any got into the jar. That's too much of a risk for me! All of your recipes look good! I don't know how you find the time to do all you do. I homeschooled 6, did the cooking, the bills and taxes, kept after the kids chores, and tried to keep the house somewhat in order. It's like having several full time jobs. You amaze me!

I feel you on cleaning the muffin tins! I recently got a silicone mini muffin pan and it cleans SO EASILY! One quick swish with a scrub brush and all the caked on dough and blueberry juice was gone. Would highly recommend if you ever want to ditch the paper liners and metal muffin tin
I like my silicone mugging pans too! They clean so easy, I never use liners. Only thing with mine, if I put them directly on a cookie sheet (for stability) the bottoms get quite dark. So I put down my silicone cookie sheet liners first, then the silicone muffins tin.
Lisa, another great recipe to make with all your milk and eggs is baked custard ! Most kids love it ! Even grown ups 😁 and you can use all healthy ingredients plus add in fruit if you choose!
Since you have so much milk, I think making Labneh. I know it from my lebanese husband. It's pretty much a very thick, cream cheesy dip...you add salt and lemon and later some olive oil and you can just dip things in or put it on bread with some tyme...I think you and your family would love it 😊
If you use a handheld imersion blender, you can get your homemade greek yogurt SUPER smooth to the point that it tastes (better than) store bought. Key lime juice plus maple syrup/honey/sugar is my favorite for flavoring!

I use a yogurt strainer I got off of Amazon and it makes the yogurt sooo creamy. I smash half a banana to a half cup of yogurt and a splash of vanilla. Or you could use maple syrup. It tastes sooo yummy.
You could use stainless steel bowls. I love using them with the younger kids because I don't have to worry about them getting broken. I hate cleaning up glass.

So many good ideas, yum! Little tip with the thrive brand collagen peptides… the plain ones are cheaper than the chocolate and vanilla flavors so if you’re adding cocoa anyway it might be worth using plain instead! The chocolate is super convenient though and I’m sure it’s amazing in coffee.

I recently have been making a lot of coffee flavoured granola, with hazelnuts and pecans. With the coffee taste my daughter won't eat my granola hahaha for her I've been making pecan pie granola. And a favourite condiment is a spicy mayo based sauce that goes so well with texmex. As I cannot have much gluten now I spread it on an omelet and add ham, avocado and such and roll it up.

As for antique bowls usually the paint is really high in lead! You could always look into Pyrex or anchor hocking glass mixing bowls! I love the look of antique bowls but the lead isn’t worth it to me

I'm not sure what kind of technique and culture you're using for your yogurt but my Turkish mother-in-law makes an absolutely amazing, creamy, and rich Turkish yogurt without straining off any whey. She boils the milk for about 15 minutes beforehand, lets it come down to temperature, puts in the culture from a previous batch, covers the entire containers in thick blankets and the lid slightly ajar to allow excess moisture to escape, and places it in a warm place to ferment (typically the oven). I've seen many Americans use some kind of device to keep the yogurt at a constantly warm temperature but none of the traditional yogurt-consuming cultures does that and it doesnt make a lot of sense historically either. Her yogurt is so much better than store-bought that the Greek yogurt tastes foul to me! It's also rarely consumed sweet. Typically a salty addition to salad appetizers (meze), as a sauce, as a watered down salty drink, etc

I’ve heard you can use raw milk diluted 50/50 with water as a fertilizer for your garden! That might give you something else to do with your abundance of milk. :)

Have you tried using the muffin papers with canning lids? You can put a muffin paper inside a canning lid on a baking sheet and that way you can make more than 12 muffins at the time. I prepared cupcakes for a birthday party and was able to make 48 cupcakes on my cookie sheet at the same time.

I had to hide the second batch because my kids cleaned out the first batch before I finished making the second lol

I use the same ingredients except I add in a scoop of protein powder and 2 spoonfuls of peanut butter. Yes on the yogurt! No matter how much I drain it, It still is not like store-bought. And I do it for 24 hours to remove all the lactose so it is super sour! It’s still good and we eat it but not the same. This week I had a fail and used not enough cheese cloth. Is there anyway you can link the dish towels that you got on Amazon? Or just list the name, it would be easy to look up. Appreciate it. Thanks so much.

It’s more pourable/spreading thin onto sheet pans. There’s NO rolling, which is always my nemesis to get thin dough that fits the pan. It pretty much thins & levels itself!!!! I’ve not tried it “yet” but I will definitely add cheese like you did… maybe sprinkling it on top 😊

I make yoghurt from fresh milk like this: i boil the milk two times on low heat for a few good minutes (40 mins aprox) to evaporate some of the water. Then, after cooling it completely, I put it in the instant pot with a half can (or a full can if you want) of condensed milk and two spoons of plain yogurt. 👌 it turns out perfect. At first it is a bit runny but after refrigerating it's thick and veeery creamy. I like to add just a bit of vanilla to it and sweeten it with maple syrup before i put it in the fridge. Yumm.
I love snacking will be sure to make the crackers. Your basket of eggs looks just like mine. I’m glad I’m not the only parchment paper reuser… also don’t use a recipe for granola throw it together just like you do. Now I’m hungry for fresh strawberries to go with it.

We use the pasta maker attachment on our Kitchen Aid mixer to work the cracker dough down to a very thin dough. Works great!
Collagen muffins
2 cups einkorn flour
* 3/4 cup sugar
* 1 teaspoons baking soda
* 1/3 cup collagen
* 1 teaspoon salt
* 1 cup chocolate chips
* 1/2 cocoa powder
* 2 eggs
* 3/4 Greek yogurt

Einkorn flour is extremely expensive here in the US too- at least looking at it from my family’s income.
We buy einkorn berries and milk our own. It does reduce cost. If those aren’t available, maybe try spelt, emmerer or any kind of non hybridized wheat.
Any flour that is unbleached and easy for you to get.

Love love your videos, thank you! Reference your crackers, Ruthanne from Homesteading with the Zimmerman’s, has a sourdough version of just sourdough, melted butter, + herbs of choice. It’s more pourable/spreading thin onto sheet pans. There’s NO rolling, which is always my nemesis to get thin dough that fits the pan. It pretty much thins & levels itself!!!! I’ve not tried it “yet” but I will definitely add cheese like you did… maybe sprinkling it on top 😊

I make yoghurt from fresh milk like this: i boil the milk two times on low heat for a few good minutes (40 mins aprox) to evaporate some of the water. Then, after cooling it completely, I put it in the instant pot with a half can (or a full can if you want) of condensed milk and two spoons of plain yogurt. 👌 it turns out perfect. At first it is a bit runny but after refrigerating it's thick and veeery creamy. I like to add just a bit of vanilla to it and sweeten it with maple syrup before i put it in the fridge. Yumm.
I think Lisa uses raw milk, so she wouldn’t want to cook the milk or she would lose the good bacteria.
