So, when I went on Music express at Lagoon (I work there) I noticed that the seat backs are held on with essentially a large piano/door hinge. It made me think of your project.
I like your color choices and the upholstery work is nice. I wish I lived closer to you, I'm in Allentown, to give you a hand so meeting you deadline is no problem.
You have your work cut out to meet that deadline. I sincerely hope you make it and we get to see the progress. Loving this restoration, i have to say :)

The upholstery looks awesome Pete. You don't know how many hours I have stood infront of an upholstery table rebuilding ride seats. Nice Job buddy.

Use velcro on the seat inserts so they can be easily stored in the winter months

Did you ever figure out what material you are going to use on the front of the carts?
Im leaning towards fiberglass reinforced panels like would be used to cover the sides of motorhomes.
What software did you use to make the todo list?
I keep track of this project in Notion.
