The sliced sweet potatoes dehydrated are great for dog snacks, too! My dogs get so excited over these. We call them doggie chips. I don't mind giving him several since they are basically "raw" veggies for pooch. Our older dog that passed loved these, too. As well as my aunts horde of dogs. They do need good chompers, so make sure the dog can eat them. Was thinking of making a mess of them for my dog to "gift" aunts dogs for Christmas. Lol
Just got 10 lbs of sweet potatoes last weekend for $5, and immediately thought of you. Wow, everything except the doggie treats in one vid! I want to make tortillas, and have tried boiling and mashing and adding almond and coconut powder and ended up scraping the results off my counter, so was hoping you would have a way to make a "flour", and of course you did. Can hardly wait (and I may try some slices for scalloped. The dogs don't need too many treats.

Was gifted a case of sweet potatoes in exchange for canning class to a neighbor. Wanted to try your dehydrated mashed potatoes and wanted to pass a little hack on how I spread them on the silicone sheet. It made the job so easy! Dampened the counter so my sheet was stable, placed random dollops of mashed potatoes on the sheet and spread slightly, then covered it with a sheet of parchment and used a small rolling pen to spread the potatoes more evenly. Worked like a charm and took little time to complete the task.

The food processor comes with a shredding and slicing attachment. It makes prep an absolute breeze and much safer. They also have another combo that has more blade types for the processor. I adore your mandolin technique and appreciate your use of the glove but maybe consider working with them. They may give you a discount, one for free or commission for doing so. Hello Darcy Learned a lot for your videos. For your consideration: (Powder/Flakes). I like to spiralize (Like Zucchini) my potatoes with or without skins. Blanche 2-3 minutes then dehydrate. Seems quicker in my GardenMaster. Also Left over boiled potatoes. I will be put through a Ricer then dehydrate. both mill easily with my Small Magic Bullet. Still, neat to show someone that 10LBS Peeled, powdered fits into1 jar.

Mashed potatoes are one of my comfort foods. I typically use the store bought instant mixes because making one serving is quicker and easier. The light bulb went off in my head after watching this. I can make my own instant mashed potato mix and save some money. I can use the sweet potato powder in my muffin mix. Thanks for the inspiration!

I would have never thought to powder sweet potatoes. What a great way to make a side dish for one ... add a little butter and cinnamon sugar, top with a few marshmallowa ( or a brown sugar/butter/pecan topping) and bake 😋
Had sweet potato pancake mix so great that I can make flour. Tip I learned mix half potato flour with half regular flour when making pancakes otherwise they will not be light and fluffy.

Awesome video! I still need to purchase that glove. Maybe that will be a Christmas gift to myself, haha. Anyway, it turns out that even on my best day, I am not a good blancher. Is that even a word? 😄 So, I have found that even though it can be a little "futzy", I prefer to roast sweet potatoes, then slice or dice and dehydrate. The final color is gorgeous and they rehydrate beautifully, as long as I give them enough time. The powder can look a little white-orange but the final "mashed" rehydrated color is spot on. The flavor is out of this world. Worth it to me to go that extra step. Thanks for all you do to continue to inspire us. Would the dried mashed sweet potatoes keep longer than a year if they are stored crumbled instead of powdering? Thank you for your great informational videos!
It's for color and shelf-stability. They will be okay to eat, but may not have as long of a shelf-life as if they had been blanched (which stops the enzymatic process that makes food degrade).
Shredded, not, yet. But it works the same way as regular potatoes - blanch after shredding or shred baked ones that have been in the fridge overnight then dry.
I need this to add into my protein shakes for the carbs. Do you know if I use the powder the consistency will change into mash potatoes? I just want to use room temperature water along with some protein powder along with this.
It depends on your space, environment and use later. I cannot store in 50degree temps because they don't happen here. Dehydrating gives me many many more options of use over canning and takes up less space.
I watched a ton of your videos before purchasing my Cosori 6 tray dehydrator. I learned so much except when you repeatedly said to wear the mesh glove...... I didn't and ended up cutting the tip of my finger off on the mandolin slicer. Two trips to the ER to get the bleeding to stop. The end of my finger is forever gone and I have had to put a medical grade glue blood clotter on now for over a week to keep the bleeding under control. Listen to Darcy's kitchen wisdom and wear the GLOVE!
For making the powder, is there a good way to estimate how many pounds of potatoes to go on the trays? I don't want to way underestimate, I like full shelves, but I don't want to way over estimate either and have a bunch of mashed potatoes waiting for drying time. I have the same Cosori dehydrator you have.
Measure out a tray and weigh it. I don't preserve that way. I buy what I can and preserve it and make note of serving size to dried ratios so I know how much to use after. I don't even remember how many potatoes I used in the video process (Because I did a lot more off video, too). You can always freeze the mash if you have way too much.
I wan to make sweet potato dog treats, is this the method I would use for that. I have seen them in for store and would rather make them myself so I know whats in them.
Or if you allow moisture to be in the jar - but it doesn't clump with long-term storage as long as you store it in properly sized air-tight jars. you can always use a moisture absorber if it makes you more comfortable.
@@ThePurposefulPantry I did some last week. It was definitely dry but it does clump up. I'll put it in a warm oven. I don't like sweet potatoes but my dogs do. I make snacks with it for them and I want to make sure its safe and not going to hurt them.
You can do that, too - but the puree tends to dry a little faster, and isn't so hard. Chips can dry hard, especially if you cut them thick. This isn't about this is the only way to do it, but a few ways to do it, and you can do what works best for you.

Yep - there are few vegetable flours that can exchange 1:1 -- even zuke flour is recommended no more than 1/3 of the total volume.

How would you do sweet potato chips?...i do think that would be great for my family.
They will be hit or miss because they are not snap crunchy like fried ones. Cut super thin, blanch, season and dry.

It will depend on how much you use..start with small amounts and work your way up to find the consistency you are comfortable with.

Why dehydrate them? They won't store better that way - and if you're wanting to make chips the oven is the best solution.
