Most standard liquors are only 40% alcohol or 80 proof... That byproduct is still 90+proof. He basically just made a high quality apple liquor.

Hey, Cody. If you are looking for a nonstick method to keep fruit juices, etc. from sticking to glass, use a disposable plastic plate instead. In my years of experience of fruit seed collecting and drying fruit slurries for experiments, plastic does not stick (or sticks far less with stubborn substances). My rule of thumb is, if it contains high amounts of sugar or gets sticky, a plastic plate is my friend. Thanks for the video along with giving me another brilliant experiment that I want to try.
There was a recipe for making pectin from apple cores and peels, in a cookbook from my grandmother's era (I'm 71, so my grandmother's time was around the turn of the 20th century). Packaged pectin wasn't available in grocery stores the way it is now, and the frugal family who wanted to make preserves from their home-grown fruit found a way to make "natural pectin" from something that might have gone into the compost pile. Also, people knew to include some under-ripe and over-ripe fruit when harvesting something like raspberries to make jam. I used to make homemade jam and "can" it, and give everybody a jar of jam for a holiday gift. Homemade jam is always delicious, and it impresses people. (Here's your gift - a loaf of homemade bread and a jar of homemade jam! At least I didn't knit you a sweater...)

I squeezed it through a sieve and the juice instantly jellified on the other side of the sieve... I decided to scrape it off and put it into some applejuice. Lovely work! A tip for drying pectin - used lightly oiled parchment paper. It helps... trust me on that one - candies are VERY sticky if given the chance :)
Here's an idea Cody: People are concerned about the sugar content of what they eat, and you're good at extracting that. would you create a video series extracting sugar from different food items, fruits and soft drinks, comparing them to each other and the manufacturers claims? these days Wikipedia's text format doesn't cut it and we need to see the amount with our eyes.
That was the most scientific approach to jam making I've ever seen. Normally, cherries have enough pectin in them already, without needing to add more. But thanks for the interesting method and video, Cody.

Cody, here are a couple of video ideas: 1: Does stuff burn better in 0.2 atm pure O2 than it does in 0.2 atm O2 + 0.8 atm N2? 2: Go to some local Makers workshop, collect their metal filings (from lathes, milling machines etc.) and try to separate/refine it into useful lumps of metal. The challenge here being that you'll get a mix of aluminium, brass, iron, steel.
Today on Cooking with Cody: We are going to make Choke cherry jelly. First we need to put on some gloves. Had we been messing with mercury, we wouldn't need gloves, but fruit can be vary dangerous. it can stain! Now that we went through a 3 day process, lets put this jelly on some toast! Might be a good idea to add metric unit measurements in the subtitles. This way the flow of the video is not interrupted, but the rest of the world can still follow the recipe without having to try to convert unfamiliar measurements.

It's similar to gelatin, it's what makes jelly and jam thicken. Not all fruits have enough naturally to make good jam, so it's useful to have extra that you can add.

People are concerned about the sugar content of what they eat, and you're good at extracting that. would you create a video series extracting sugar from different food items, fruits and soft drinks, comparing them to each other and the manufacturers claims?

Cody, here are a couple of video ideas:
1: Does stuff burn better in 0.2 atm pure O2 than it does in 0.2 atm O2 + 0.8 atm N2?
2: Go to some local Makers workshop, collect their metal filings (from lathes, milling machines etc.) and try to separate/refine it into useful lumps of metal. The challenge here being that you'll get a mix of aluminium, brass, iron, steel.

Today on Cooking with Cody: We are going to make Choke cherry jelly. First we need to put on some gloves. Had we been messing with mercury, we wouldn't need gloves, but fruit can be vary dangerous. it can stain!
Now that we went through a 3 day process, lets put this jelly on some toast! MY MY MY, that was some good toast! LOL, never change Cody, never change!

Apple schnapps is what I call it but got drunk a few times on the comercial stuff. Come to think about it I have a bottle or two stashed some where !
@@barrymayson2492 i had to do some googling on this but schnaps is a vodka like liqueur usually fruit flavored whereas apple jack would be more of an icewine where it is distilled by freezing water out of solution instead of just concentrating the grape-juice by allowing the fruit to freeze on the vine before harvesting.. but hey im just being picky about what its called not how it tastes or even weather its good or not ;]

Might be a good idea to add metric unit measurements in the subtitles. This way the flow of the video is not interrupted, but the rest of the world can still follow the recipe without having to try to convert unfamiliar measurements.
why? everytime i hear how many meters something is or what temp it is in celsius, i have to convert. are you worse at math than an american?

@@JesusisJesus yes, the pectin is incapable of converting to sugar, due to the lack of enzymes that would normally be produced by the plant, so the, sugar and pectin stay as separate compounds. Hope this helpsm
It's similar to gelatin, it's what makes jelly and jam thicken. Not all fruits have enough naturally to make good jam, so it's useful to have extra that you can add.
