Homemade Pancakes (easy to memorize):
2 cups flour (half wholewheat)
4 tsp baking powder
1/2 tsp salt
2 tbl sugar, honey, or maple syrup
1/4 cup oil, coconut oil, vegetable, or melted butter
2 eggs
2 cups milk or buttermilk
Apple baked pancake
Saute 5 sliced apples
1/4 cup of butter
1/2 cup brown sugar
Until sugar is dissolved. Cover with pancake and bake at 350 until pancake is done.
Butternut squash soup
half pound bacon chopped and sauted
half white onion chopped
1 tbl minced garlic
1 tsp salt
splash of cinnamon, cumin, nutmeg, chillipowder
1 whole butternut squash peeled and chopped
about 2 to 4 cups chicken broth or water. Less liquid if cooking in the instapot.
cook for 15 minutes in instapot. on stove cook until soft.
Blend.
add 1 cup of cream.
Serve topped with croutons and parmesan cheese.
Homemade Croutons
Chopped days old bread. Drizzle with olive oil, sprinkle with garlic powder, salt, herbs, and cheese. Bake at 500 degrees until crunchy.
Orange Dijon Salad dressing
1/4 cup orange juice
1/4 cup olive oil
1 tbl grainy dijon
2 tbl apple cider vinegar
favorite herbs and seasoning
Out of this world Rolls
Dissolve 2 pkg. yeast in 1/4 cup of warm water with a sprinkle of sugar.
Mix 3 eggs, 1/2 cup melted butter cooled, 1/2 cup sugar, and 1 cup warm water. Once yeast is proofed add to mixture. Add 2 1/2 cups flour and mix for 2 to 3 minutes. Add remaining 2 1/2 cups of flour and 2 tsp salt. Knead. Rise for 1 hour. put in fridge. Shape into rolls, let rise for another hour. Bake at 400 degrees for 7 to 10 minutes.
Buttery Flakey Pie Crust for double pie crust
2 1/2 cup flour
1/2 tsp salt
1 cup cold butter cubed
1/3 to 2/3 cup ice water

I love your videos! I lived in Eastern Oregon until four years ago, and then I moved to Redmond, Oregon. I’m a retired elementary school teacher and now have time to cook more. I stayed home when my kids were little and did lots of canning and jam making, as well as making meals from scratch. Your videos take me back to then. Sweet memories!

I too have pie anxiety. My sister was the "baker" in the family and still is. I am in my 80s and still have anxiety when I think about making a pie. (She is 84). Love your videos.

It seems like the pond you showed in the video has an algae bloom. Such ponds or standing waters are called eutrophic. I don't know to what extent cleaning measures need to be taken, but it would definitely be good to check again.

I haven't made a pie in so long. The pie crust recipe sounds like my grandmas except I think she has some vinegar in it. I canned the pork shoulder and pork butt so that whenever I want some bbq, all I have to do is drain the juice out and put the meat in the pan and warm it up and the add the bbq sauce. I'm just learning that I like pickled things. Last year I canned coleslaw from my red and green cabbage from the garden. I love it on tacos and many other things. I will definitely try it on the bbq the next time I fix it. I still have some apples left that I got from my friend's orchard. I think I want to make an apple crisp, but also add some cranberries in it.

What a cozy and warm video. I used to cook comforting meals and follow the Weston A Price foods, but I developed for allergies and sensitivities. It makes it challenging because I love homemaking and creating with food to find peace and love. But there are so many foods that I cannot have. It’s challenging to make comfort food without gluten, dairy, eggs, nuts and seeds, tomatoes, alcohol, and a limit of 25 grams of carbs per meal. I try though. The other day I made an apple crisp with limited: farm apples with fresh lemon juice and lemon rind and a touch of sea salt. Topping: gluten free oats, olive oil, cinnamon, ginger, sea salt, and freshly grated nutmeg. And yes, there is no sugar or maple syrup because it adds to the carb count. 😅 But, it made the house smell delicious and it was warm and comforting. I had 1/2 cup after a complete meal. The apple crisp is considered a carb. Yesterday, I went to a farm and got a 3lb beef tenderloin (a special treat for sure) which I’ll make a pot roast with. That will be homey, comforting and delicious. Yes, I miss all the other foods and the art of preparing them, but I do find peace and joy, in what God has blessed me with. A week ago Sunday we had a much slower Saturday/ Sunday. It was a conference weekend for our church where we stayed home and watched church meetings broadcasted! Those Sundays always include fresh homemade rolls and maybe a pie or yummy cake. These slower weekends are very wonderful for me! Everyone gets to stay home!

Life is so much better with wonderful and yummy meals. In my house it makes everyone's moods better too. We had pulled pork this past Sunday. I put it in the oven and it cooks while we are at church and its hands off for the whole day. Love that. We did our with sourdough cornbread and veggie sides. Just used the left overs today for a quick homeschool lunch- taco salad and if was great. I am trying to do more meals where I have leftovers more often. The soup that you made looked so yummy with the sourdough bread squares on top. Thanks
