    Ingredients:
    Grated Coconut - 3 Glass
    Curry Leaves - 2 Handful
    Coriander Powder - 3 tsp
    Chilly Powder - 1 1/2 tsp
    Asafoetida / Kayappodi - 1/2 tsp
    Tamarind - size of a small gooseberry/amla (Make this into small pieces)
    Salt - as needed
    Instructions:
    Powder the dry coconut in a dry mixie jar
    Mix this powdered coconut with the curry leaves
    Roast this mixture in a low flame in a pan
    Stir this every so often
    It takes about approximately 40 minutes to get it browned evenly
    Add coriander powder, chilly powder, kayappodi, tamarind and salt
    Saute this for a few more minutes and turn off the flame
    Once this is cooled completely, powder this in a dry mixie jar. Make sure to run the mixie for a few seconds, or else it will form oily clumps.
    Yummy chammanthi podi is ready to be served. This will remain fresh at room temperature for about 2 weeks.
