Just be aware that different sections of the Picanha will very in tenderness. If you watch all of Guga's Picanha videos, he explains that the middle section is the most tender and as you go towards the third vein is becomes less tender. I think he also said that the steak next to the middle section on the tip side is the second most tender. You may have skewered the two most tender steaks and cook the tougher sections as steaks. I don't think the cooking method would have made a difference to the tenderness. Nice video. Cheers

Love the Chanel, I have tried it once on my Flaming Coals Deluxe Cyprus grill on the skewers, but rotating like the vid you showed. I love it, all the fat kept basting the meat as it rotated.
Great picanha! Has said bellow with such meat I also wouldn't use chimi! I believe chimi will try to steal the show of such a beautiful meat! As sides go with the farofa, some brazilian black beans and the grilled corn cob. You can also go for a "finger thick" cut and quick sear them... But it's easier to mess it up by overcooking. To finalize It's "picanha assada" or "assado de picanha" :D :D Great work! Keep it coming! Congrats on the youngling! PS.: Forgot to mention STEAK!! :D

Well done Harry, only took you 4 years to reach picanha youtube enlightment. Glad you had a decent taste and realised its potential. Keep trying, the STEAK you nailed you know what you are doing there, the skewer you're about 75% there. It's not easy, easy to mess it up and gets better with practice and with good quality lumpwood charcoal instead. If you want the real brazilian mouth orgasms try the 5 second hand heat tolerance rule for the skewer, and then slice thin broad slices off the C shaped side next time when its still about medium rare ish with maybe a touch less rest. There are other ways, other cuts just as good, some think way better. Don't forget to try 'farofa' with it, instead of the 'argentinean' chimi... and make sure you do the farofa challenge with a slo mo portrait shot - a table spoon full of it and say it loudly with your chest FAH-ROH-FAH! Thank you for sharing one of the nicest foods in our culture! 🙏

Man you have some nice toys on the patio for cooking STEAK. Have you done a steak in the Dome, get a cast iron pan super hot and the crust becomes amazing.
try reverse sear on the whole picanha. so season well first. roast whole until the inner temp is 40deg C, then cut into steaks and oil well, then sear those. 1min per side. 2mins on fat Down.
Love picannia. If you do it properly, it's a better steak than Scotch, IMO. One tip, though, if youre cooking it on skewers you can slice it thicker and carve thin slices off the steak while it's still on the skewer as it cooks. So you take a little off the outside and then put it back over the heat to keep cooking. You end up with super tender slices that melt in your mouth
I have to say that your version of perfect is what I call nearly raw. My Bride and I like steak which doesn't moo when we bite into it. My first father in law said of steak, "wipe it's nose, wipe it's arse & put it on the plate.
