Harry, you don't make a roux with cornflour, what where you thinking? If you want to use cornflour to make gravy ( yuk), you make a slurry and add it to the stock. Also, boconcini would be closer to the cheese curds that Canadians use than block mozzarella.
As a Québécois, I appreciate your version of our national dish. Using mozzarella as an alternative to real cheese curds is a reasonable move, and if your poutine tastes half as good as it looks, you’ve got yourself a winner!

Just an atmosphere thing... Honestly, I miss the older videos where you just pop a fire on the ground and cook!!! I sincerely congratulate you on your success and growth! As some who is gluten free I would recommend using arrowroot for making gravy and I am from Perth as well you can get from woolies or coles.. I am writing my own gluten free recipe cook for camping

You always have to have the "salt" just a question when camping or just cooking where you need to use your own fire pit what do you do with your coals and ash when you're finished with it? No one out of all the different camping or 4wd channels seem to mention this.
This reminds me that I get my away-from-home cooking kit it's own dedicated salt. Moving it back and forth from the kitchen is sure to backfire one day...

I've had a salt fail at Moreton Island. I brought rock salt but it was in a salt shaker not grinder...
You could always use a bit of salt water, or boil some off to make your own
