Guyanese cakes: Sponge & Fruit Cakes

- Guyanese tradition of baking Christmas cakes is in most cases a family chore.
Ingredients for 1 pound
1 lbs. White flour
1 lbs. unsalted butter
1 lbs. Sugar
12 eggs
1 oz. baking powder
2 tbsp. vanilla essence
1 tsp. grated nutmeg.
Add 3/4 lbs. mix dry fruits for fruit cake
cherries, sultana raisins, prunes, citrons.
Recipe can be double for 2 Lbs. or triple for 3 Lbs.

Good night. It's wonderful that you guys had the children assisting with the baking of the cakes. They are bound to become great chefs/ cooks. The cakes are all looking very nice. I can just imagine the aroma in the house. On Christmas Eve night, the streets are filled with the sweet smell of cakes.
