Ingredients:
• 1 tablespoon extra-virgin olive oil
• 1 tablespoon butter
• 2 onions finely sliced (300 grams)
• 2-3 garlic cloves
• 2 potatoes, (700 grams) peeled & thinly sliced
• 6 cups vegetable stock
• 1 large bunch parsley (200-250 grams)
• 150 ml fresh cream
