Bakers are very literal. We might say it in a different language but it’s a literal translation 😂

Very cool to see the synthesis of man and machine and how we can use incredible tools to increase production and ease of production while still maintaining the exact same quality as if it was done entirely by hand.

6:30 Makes it really a 2.0 version of a spiral kneading machine. But probably the frame and stop when open is there for a good reason. Sometimes things just take those few seconds of life to keep it safe...

You can see they cut the wires in order to make that opening. Some older mixers don't even have that guard making them very dangerous.

Cool. Suddenly we need less experience in making high quality bakery just by understand the tools and the reason behind that.
I wonder how many variation we can produce by using that tools or how long they do the research before find the best way
And thank you for providing for us this so that if one day we have opportunity it would be easier to just buy the bread and learn the difference

"This is called a proofer...it proofs the dough."
"This is called a molder...it molds the dough."
"This is called a divider...it divides the dough."

As someone who works with special children, I’m deeply offended by the words “retarding dough”. I highly suggest that you think of another name for it.
