Yum!!
Going to give these a try this weekend as I have a LOT of discard to use and they look amazing! I just want to add how lovely it is to watch a video in a 'normal' household with kids 😂 because I can totally relate to this video! Thank you for sharing.
Aw what a sweet comment, thank you! It's important to me to not sugar coat reality and be relatable so this means a lot! Did you end up making them? I make different flavors of these almost every week!
I did and they were absolutely delicious! The kids loved them! They didn't last very long though 😅 I put in some grated apple as we didn't have many Blueberries left and upped the cinnamon slightly and they were amazing. I've been ordered to make more this weekend! Thanks again for sharing x
These were excellent and I will be making again. I didn't have milk so I used water. Extra virgin olive oil was all I had. I used 1 cup of whole wheat flour. 1/2 cup of sugar. My husband doesn't care about healthy foods and he loved them.
I made these today and they are yummy! I used my KitchenAid mixer to make it easier. My home grown blueberries were dehydrated so I just let them soak overnight. Also, half sugar and half Monk Fruit. Next time I'll add nuts.
Just made these, and they are delicious . I used butter and reduced the sugar to 1/2 cup brown sugar, and 1/2 cup white sugar. This was enough sugar for our taste. Thanks for sharing with us.
Yay!! So glad you enjoyed them!! Love the combo of brown sugar, it definitely incorporates some depth of flavor! Thank you for sharing your experience with this recipe! 😊
Woohoo! I am a lover of all things sourdough and discard muffins are always amazing! My husband rolls his eyes at me when I read a recipe and say “do I really NEED an entire cup of sugar or can I scale it back a bit?” I personally don’t like super sweet stuff so I usually scale back a tap. I’m happy to see I’m not alone. I need to get myself a muffin tin. All I have is a cupcake tin, which gets the job done. But your girl would appreciate a full size muffin lol I never thought to use two spoons to help scoop the batter. I will keep this tip in mind. Thank you! My dad just gave me a bag of sugar in the raw. It’s big, crunchy, pieces of sugar. I will see if that works nicely on top. Thanks as always for sharing!
Yes Lydia!! Let me know if you make them! This actually is a cupcake tin also, I forgot that muffin tins are actually bigger, haha! I'd definitely appreciate a full size muffin also, then maybe I won't eat 3 of these 🤣 Yes I often try to scale back on the sugar but when kids are involved, there's a fine line lol!
Lol I've done that too! I heard that if you don't crush them down, the smart chickens might start pecking their shells. It's probably rare but I wasn't taking any chances 🤣🤣
Ingredients for other who make this recipe on repeat like me 😊 1 cup sourdough discard 2 eggs 1/4 cup milk Dash of vanilla extract 1/4 coconut oil 3/4 cup sugar 2 tsp. Cinnamon 1 tsp. Baking powder 1/4 tsp. Baking soda 1/4 tsp. Salt 1.5 cups All purpose flour
