phantoms being afraid of cats can be explained easily
when you go to sleep (and have a tamed cat), there is a chance of the cat giving you a "gift" when you wake up
one of those gifts is a phantom membrane, indicating that the cat may have killed a phantom
so it's safe to assume that phantoms instinctively stay way from cats because they're their predators

my guess is that the creators of the temples wanted to better defend themselves due to low resources, so they used magic to create creepers to act as a way to attack other places, and defend what they plundered. the cats acted as deterrent both because of their cultural importance and as a means to potentially herd creepers and prevent them backfiring. the spore releasing was likely just a way to create creepers without expending resources in artificial creation.
I think the clue is in "Great Sphinx of Giza" because there seems to be a cat temple standing on the side of the dessert temple. The cat temple is like the king of dessert temples where the creeper was made. This is probably the reason why the creeper is afraid of cats.

there's a problem with "exploding cats": creepers aren't really afraid of death, otherwise they wouldn't explode, so there should be something worse than just dying for them

I imagine that cats mess with their reproduction somehow, and that creepers are afraid of them because of that

Another theory: Creepers also drop music discs, I believe it's bcoz ancient builders wanted to store something in creepers with the help of music discs and they fear cats coz usually players have cats with them and then they can't get that info stored in the creepers

I think the creepers were made to defend desert temples since the recipe to make them is on chiseled sandstone bricks. But they escaped from there and started roaming in the wild, and they attack players to defend the desert temples. Since the creepers, a mutated pig, it could be possible that sense cats hunt, guinea pigs, creepers might be afraid that they will mistake them for a giant, guinea pig, so that’s why they’re scared of them
I think that there were many groups of the Ancient Builders, like the ones that lived in the Ocean, In the Overworld, and the Desert. The people who lived in the Desert created the creepers for defense against the other civilizations. The creepers exploded and spread their spores.
Later after the Plague with the Zombies, Skeleton, etc. The Ancient civilizations died and the creepers learned to live with the monsters that were now roaming the Minecraft world.
So the Creeper also attacks you because he was also programmed to attack the other civilizations.

Here's my take, creepers were made from mutating the pigs by the ancient builders to protect their structures from invaders. Invaders like other ancient builder civilisations. Maybe this is the reason why we find creepers in desert temples and strongholds because both the structures were made by the same kind of ancient builder civilisation. Yes, creepers were programmed to not hurt cats, that's why they run away from them. They aren't afraid, they just don't wanna hurt the cat.
My best bet on the chiseled sand stone is that in English it says “noz”

I took a close look at the chiseled sandstone.
"XTZ" is what I found. When put upside down, the galactic X is what appears. The middle letter looks a lot like the galactic T, when taken in with a closer look. And the Z just looks very obvious from looking at the chiseled sandstone and the galactic Z.
Yours is the closest but hmm XTZ probably means something deeper

Some people theorize that's the creeper was created by a witch trying to test on a pig but got the potion wrong.

It’s because cats give you every item but gunpowder, and they don’t give you gunpowder because the creeper runs away (or because they’re secretly friends with the mission to destroy the players).
*If it’s my really weird theory, then here’s their plan:*
Cat Step 1: Act nice to humans by giving them gifts so they trust them, but they’re secretly practicing hunting so they can one day do it to the players.
Creeper Step 1: Spy on players from above.

Mojang confirmed that creepers look like dry, crunchy leaves, and it’s also with the fact, that, the creeper was supposed to be a pig, but Notch messed it up.
To add on with the theory, the desert people made the creepers to kill the ancient builders from the sick stuff they did like making the enderman and piglins as slaves, that explains why the other monsters also hated the ancient builder. The ancient builders are overwhelmed and got wiped out

I personally think it's that they wanted cats and to make them useful. What do cats do? They fend off vermin. But theres no rats in the game so creepers are the closest things to vermin. But your theory is well crafted nevertheless.
For the encrypted mesage on the chisled sand, I got, "AQZ" I don't know if it means anything. Or, it could be, "AQT," or, "AQO."
Here's my take, the creepers could of been the guardians of the temples to protect the treasures inside, the little cells around the temples was where they were supposed to stand guard for any intruders. If the creepers couldn't stop the intruders the booby trap is the last resort. But due to the ancient civilization going extinct and creepers being able to multiply, the creeper population got out of hand since the ancient civilization is no longer there to control them.
As for the fear of cats, since the ancient civilization is somewhat based on ancient Egyptians, cats are revered as a god in particular Bastet, who was depicted as a fierce lioness warrior and also a goddess of protection against contagious diseases and evil spirits. Seeing as how creepers (in present day Minecraft) are evil and also spread like a contagion, Bastet (cat goddess) is the creeper's worst nightmare.

My theory is that Mojang added the feature of creepers being scared of cats to give people a reason to go tame them. Other than that, and being absolutely adorable, (I'm a cat person) there's not really a reason to spend time trying to find one, unlike wolves who will willingly fight for you.

I think Creepers may have some sort of compound in them that functions similarly to catnip. Seeing as how cats love catnip, Creepers will keep away from the felines so that they can reach peak ripeness. Also in the game, cats don't actually attack Creepers, however tamed Osolots will.

Cats hissing when they are irritated.. Creepers tends to hiss when they are nearly to explode. They are evolutionary adaptate to runaway when they hear hissing to avoid the chain reaction with other creeper. The symbols of creeper on the buildings was about that builders believed that symbols would magically protect the buildings from explosion of creepers.
my theory: in ancient egypt, killing a cat (even by accident) was punishable by death. the creeper probably had many accidental explosions, multiple times killing a cat. so the creeper learned from its lesson and ran away from all cats it saw as to avoid even accidentally blowing them up like last time.

Finally it’s time that they solve this long time old mystery
Haven’t watched yet, but it’s to keep creepers out of villages. Iron golems can’t attack them or they’d blow up the village. Since every other mob is fended off by golems, they needed to do something to also chase off creepers.
This also includes Phantoms. If they bypass the Iron Golems, the cats will be the last resort. Flying creatures are fast & agile, and therefore, hard to smash into the stratosphere.
Cats before: I have killed 100 of rats and 6 venomous snakes.

Ok, but why the iron golem doesn't attack creepers? There are other mobs that in theory were created by humans but they still attack or are attacked by the iron golem, so why is the creeper the exception?
I got a big harem of cats to follow me around to send out creepers and 5 minutes later one creeper kills 2 in one go. Good job cats.
Cat pee destroys creeper spores, so creepers fear the source of it and don't want to let out their spores in a place that has cats as it's not a suitable environment for new creepers. Source: cat pee is some of the most caustic and destructive stuff I have ever had to clean up.

Adding on to your theory:
These Egyptian Ancient Builders probably mutated pigs into creepers so that the creepers could help them fight in war. Creepers don't hurt Egyptian Ancient Builders or cats (since they're trained not to) but they will hurt other races of players including the modern-day player (you/us lol).
(P.S yes I do think different races of Ancient Builders fought against each other in wars, etc.)

My theory is that when the creepers hunt at night, they blow up the cats and the Egyptians saw this and started to hurt them. With natural selection, the creeper might have had an evolution to stay away from our beloved felines.

Another possibility: the Egyptian culture love their cats, so maybe they gave more attention to the cats instead of the creeper, which caused them to go rogue, and they run away because they still hate cats to this day.

Your theory suggests that creepers are artificially made by the ancient people of the world of minecraft. Assuming that to be true, the minecraft mobestiary would have some fault in it as in the book it is said that creepers contain some spores that are spread when creepers explode and the spores grow into more creepers. If the mobestiary was correct, creepers would be similiar to rhizopus, as rhizopus reproduces by spore formation. Just like a rhizopus (which is a plant) a creeper spreads its spores on the surface and grow using that surface. That would make creepers walking plants. So, your theory of creepers being artificially would become false. Btw, no hate its just something I had in mind.

Trinitrotoluene (TNT) is an organic compound. The "redstone" is a nerve. Creepers are natural and were honored in the desert temple. The sandstone says x7o.
Wait… look at the creeper picture. The creeper has a robotic brain. This is my remake of how creepers were made. These were man-made. These 1 by 2 holes were chambers for creepers. The people killed the creepers and eventually found TNT. They made these desert temples old markings of their lab. But they didn’t want people to steal their gold and diamonds so they used their new TNT experiment to protect their goods. They accidentally fell in their traps and blew up the chambers. The wires to make creepers peaceful broke before it was inside their robotic brain. They ran away never to be seen again. The people died out somehow and the creepers were free. They got so mad about the humans that they stalked new players. They still drop gunpowder for TNT and it is used till this day.
