I grew up in an English, Scottish household. Kippers were a typical Sunday Morning breakfast fare. Now that I have a couple of smokers, I am going to try smoking some Herring. I have read that Alder is a good wood to use. Yet, in this documentary, the fellow mentions that they get saw dust from a local wood mill, and he also has lots of piled wood. Has anyone caught what wood they use at this Smoke House. If the saw dust is from a mill, then it could be a mixture of several species of wood.

my dad used to do this on a much smaller scale up here in Maine in the United States. dip netted herring every summer with him, then gave em a nice salt bath then hung them by the dozens in his old ice fishing shack that he converted into a smoker! I remember the smell fondly! And my LORD is this stuff good as well! especially if you get a fish that has roe in it! smoked herring roe is my favorite by far!
I can still smell the smoke as well. Its something that stays with you! I have not eaten the roe, but now you have egged me on! :) Thank you for sharing your story!

A box of salted herrings mmmm , just need three. First I strip the skin and remove the head and bones. Shred the flesh. Then soak in water for a couple of hours to remove the salt and drain water when ready to cook. Have ready one chopped onion, six sliced tomatoes, some chopped celery and cilantro , and one cayenne pepper . In a saucepan heat some oil , add the smoked herring , then the onions and cook together with the tomatoes. Lower the heat add the rest of ingredients and simmer for ten minutes. With steamed rice and a bowl of lentils you have the magic. And I always give gratitude to the fishermen in NB who have kept alive the centuries old tradition .

Its oak they use most commonly because it's full of tannins.
