You could try pumpkin if you like and if it’s available. It is better if you use a starchy or a pumpkin with low water in it. If the pumpkin is too wet, you have to fry the pumpkin on low heat after you steam it.
if you use active dry yeast, you need to activate the yeast according to the instructions. for the flour, it is ok if your all purpose flour has good gluten.
If the bottom part is not fluffy, looks like pudding, it may be caused by the bottom temperature is not enough, try to put the pan at lower rack. If the not fluffy part is at the center of the bread, it should be not baked completely. Try to add several minutes to the baking time.
Adding a little low-gluten flour(Cake flour)reduces the gluten of the dough, and makes the bread softer and less chewy . You can use AP flour instead of cake flour or use all bread flour.

可以冷藏低温发酵,但这样烤出的面包组织会相对粗糙,会有很多气孔。馅料不用提前做,当天做就可以了。当然你也可以提前做好第二天使用
