    Angelica, I have been living in China for the past 5 years. Unable to fly home to Texas because of COVID canceling everything here, especially air travel. Today I made this rice. It took me ages to get the Knorr tomate, but I managed to find all the ingredients. I was so happy I wanted to cry. This was so good! I followed the recipe and timing to the tee, and it turned out perfect. Not dry, or mushy or burnt or anything. Just perfect. I ate it straight out of the pan. My next stop is trying to make refried beans. Then I will be golden! Thank you!

    My kids have recently discovered how much they love eating refried beans mixed with Mexican &/or Spanish rice. I have always mixed mine together and they use to say it was nasty. But they are adults now and we made some Spanish rice and refried beans recently as side dishes and they tried it together finally and LOVED it lol! Now my 25 y.o. daughter wants to eat it all the time and makes sure we gave all the stuff to make it on hand! I want to try this recipe of yours! I know this will only take our mixture up several notches! Thank you so much for sharing your dad's recipe! My dad is no longer with us now either and had a love for cooking. I don't have any of his recipes written down. He kept all his in his memory. He only wrote down his poems. I wish I had his recipes tho.

    Recently, I moved and my kitchen supplies were still in boxes. I needed to make Mexican rice and used a squirt of ketchup. It was not too bad and satisfied my craving. We are certainly mothers of invention. 👍🏼💕

    I absolutely love Mexican rice and I have tried many different ways to make it. I find that using salsa and chicken bouillon powder and water is the easiest way to make Mexican rice.

    I keep a big jar of it (Knorr tomato bouillon) for the same reason haha! It has amazing taste and makes it so easy, even my hubby can make it.

    OMG... my son wanted turkey tacos last night and I decided to make this rice to go along with them. He LOVED the rice - added it to his tortilla with the taco meat, etc. I decided to just skip the tortillas, put some of the taco meat on top of the rice on my plate with a dab of sour cream. THAT was outstanding and it's all because of that rice!!! So glad I found your channel and this recipe!!

    I love Mexican red rice , honestly it is my favorite rice. I also use fresh ingredients to make mine, but can’t wait to try your Dads /your recipe. I also LOVE cumin. I was born & raised in South Texas and I was fortunate enough to learn to cook Mexican food by my friends Abuella. I was in love with the smells , textures and tastes of her cooking.       Ok I could not wait I had to try this after time after time of epic fail of rice. WOW this is like 95% tasting like the restaurant here in my town. I think a smidge of onion would be great and I did use chicken broth. THANK YOU THANK YOU THANK YOU for this recipe I WILL be using this one going forth!

    Angelica I like to use the can of chicken broth as you showed and for the tomato component, use tomato paste. Doesn't take a lot to get a rich tomato flavor. I keep a tube of it in the fridge so it's always at hand and you can use just what you need for the rice. But I have to say, it's really hard to beat your chipotle adobo version of Mexican rice. That stuff is SO good! I made Carne Guisada and that chipotle adobo rice several times this past winter.

    I just found your channel yesterday and I'm obsessed! In a pinch, the dried seasonings are fine but keep in mind that they contain MSG which is a neurotoxin and many other ingredients that are not very healthy but appreciate knowing this alternate version. Thank you and Blessings.

    I think cumin is essential in many mexican recipes. It’s so delicious too. Especially in enchilada sauces

    I make this same recipe almost exactly… but I don’t precook the rice and I just throw all the ingredients in a rice cooker (😬).
    Sometimes I’ll use fresh garlic and onion, sometimes I throw chopped up bell peppers, chipotle peppers or a little bit of frozen vegetables (the peas, carrots, corn type mixes) in… cilantro is great too.

    I have made this rice experimenting. But I used Snappy Tom instead, and WOW, it gives the rice a snappy kick.

    When I make soup I use a can of tomatoe sauce and a small or large (12oz) V8, plus add my veggies it is so good.. I can’t wait to try your rice with the V8…

    I never thought of V8! I’m surprised because my Gram would always put V8 in her beef vegetable soup so I’m used to cooking with it. I’m totally doing this!

    I made this Mexican rice in my instant pot. If I use white rice, are use 1 cup rice and 1 1/4 cups water, along with the spices that are used here. If I use jasmine rice, are use one cup rice, and one cup +2 tablespoons of water, and make the recipe as it is given. I cook the rice at three minutes pressure and naturally release. I have also used the rice setting and let it release naturally. I do this because my daughters stove is not easily regulated. It comes out perfect every time.

    I started using V8 juice years ago when keeping my 4 children fed and healthy. I don't like to drink it, but it sure adds great flavor to any fish that calls for tomato.

    My Mexican mom uses tomato ketchup instead of the fresh tomatoes or V8. I still use it myself. Just a few tablespoons plus chicken stock makes for great rice!

    This rice is sooooo Good! Thank you and your Dad for this recipe. I have made twice already..HOW easy too. My spice drawer always has ample onion powder, garlic powder and tomato chicken bouillon. I had chicken broth but had to try water was worried about taste . Well that didn't effect the flavor so no worries when no chicken broth on hand although I make my own and freeze it in 2 and 4 cup freezer bags. Why use it when it doesn't need it🌝

    I'm a fan of just dry ingredients and chicken broth when I'm in a hurry, also sometimes skip the toasting and put all ingredients in the rice cooker when I don't have have enough stoverop space cooking in my RV. I just don't skip rinsing. I'm curious what your 'favorite' mexican rice recipe is? As in, what would you use to maximize flavor, color, and texture if you were goin all out? Granted we all have different preferences.

    Hello Angelica…This is exactly how I make my Mexican rice…same amount of spices and seasonings…except I dissolve a tsp. of chicken bouillon AND a tbsp. of tomato-chicken bouillon directly into 2 cups very very hot water. Then pour that over the rice. Cover tightly and turn the heat down. Cook for about 15-20 minutes. Thank you so much for sharing.

As was all of your recipe video's i watched tho i had to mute you to be able to watch since there was too much talking & too distracting, i perfer the quiet cooking & baking video's No distraction from the recipe.     That’s how I’ve always made Mexican rice. Only difference is that I add fresh garlic and chopped onion….No pepper, no cumin. Also, I add the Knorr Tomate after adding the water.

    I'm a weirdo that can't eat anything related to poultry, so no chicken anything. Including eggs. So I have to use either beef or veg bouillon or broths. My son buys the Better Than Beef, and Better Than Vegetable Bouillion in the jars. And I'll use the tomato paste diluted in the broth I'll make (I dilute the bouillion in hot water so I'll add the tomato paste in that) then add a tiny bit of molasses. I find that the molasses adds a touch of sweetness that the loss of the chicken takes away, but its bitterness (with the tomato paste's) balances. And it adds color as well. 2 wins! 😋 I don't like adding fresh tomatoes, especially during the winter or spring, because they're tasteless. And canned ones are either expensive or can be hit or miss. So paste is a good way to add some tomato flavor, imho.

    I made the rice and it’s really good! I’m not a cook at all so if I wanted to double the amount of rice to 2 cups, I would just double the other ingredient amounts and double the cook time too? Would that work? Help?!
