You mentioned citric acid as the emulsifier. I don’t have sodium citrate but I do have citric acid. Do I use sodium bicarbonate to convert it into sodium cirtrate or will cirtic acid work?

You can. But you need to add it to water and boil it down to a powder again

By cooking regular cheese with sodium citrate you're basically making Velveeta.
