    According to Modernist Cuisine, the "perfect" ratio of sodium citrate is 2.8% of the weight of your cheese and liquid. I used about half of that, and my sauce still held together quite well. If your sauce isn't fully emulsifying, you can absolutely add more sodium citrate, though I would first dissolve it in a bit more of whatever liquid you are using.

      My cheese is becoming viscous... Ive used cheddar and it’s just becoming a big glob of cheese with all the liquid on top

    omg you have just improved my 14 yo daughter's quality of life! she was recently diagnosed with epilepsy so we are slowly reducing her processed carb intake with an eye toward eventually getting her to a MAD or keto diet. one of her favorite snacks is tortilla chips and store bought salsa con queso in a jar. i was REALLY racking my brain trying to figure out how i was gonna make low carb salsa con queso with that commercial cheese sauce texture. to be able to give her her favorite comfort food AND do what's best for her health at the same time is priceless. thank you so much!

      If you want to get even closer to that salsa con queso cheese then add some reconstituted dried chopped jalapeno. I got mine from Penzey's but I see that Amazon has plenty available too. You could probably add fresh jalapeno but you'd probably want to sauté it first to soften it. I think they probably use the dried product in the salsa con queso since the texture seems right to me.

    Steve, thank you so much for the sodium citrate info. A game changer. I used it with a high fat/high calorie (but so incredibly good) sauce and the sodium citrate changed it from a giant blob into a beautiful pourable sauce. (For those interested, this was modified from a myketokitchen recipe. 8 oz cream cheese, softened, 1 c butter, 1.5 cup cream, 1.5 tsp sodium citrate, 2 cups shredded cheese (can do 2 c mozz or 1 c mozz/1 c sharp cheddar). So rich and creamy, a couple tablespoons is enough to really change some plain chicken. Plus it freezes fine. I freeze it in little containers (or ice cube trays) that I can take out when I only want a 1/4 c or so. Just stir well during microwave heating as it separates a little.
    Steve, thank you so much for your videos! Am only 2 months into keto (down 18 lbs) and for first time in my life, I feel like this is a lifestyle I can handle rather than a prison sentence I have to complete. Your story is inspirational and your help invaluable.

    I purchased the Sodium citrate after I watched your last video but I haven't used it yet. Now that the weather is getting colder here in the PNW, a good broccoli cheddar soup sounds really good! I need to start experimenting! Thanks for sharing! Looking forward to the soup recipe video.

    Looks like a great sub for Cheeze Whiz in a cheese steak casserole. The ingredients on the Cheeze Whiz jar were quite disappointing.
    Also Thomas DeLauer recently had a vid on various types of cheeses and their benefits. I decided to try a few of them. Was not a huge fan of the non-cow types (goat, sheep, buffalo) but apparently they all have different health benefits. Maybe I can "hide" them in a batch of cheese sauce and still get those benes.

    On the third time I made these cheese slices I queried google for how many ounces of cheese is considered a cup of cheese. I know 8 ounces = a cup. Yet with cheeses one cup equals 4 ounces Game changer using the correct ounces the slices were not so thick.
    Thanks my husband adores these slices! We use cheddar our favorite .. He helps me to smooth out the cheese and slice .

    As a side note, it would be worth mentioning that it is best to grate the cheese yourself - rather than buy pre-grated cheese. This is because most factory-grated cheese has wheat-flour added to it - to stop it clumping together.

      First, it's generally not wheat flour, but rather potato starch (more often than not). Second, the contribution to the carb count is negligible. But if you value that over convenience, then by all means, grate your own.

    I did not know that about Sodium Citrate (and we have a bunch because my wife/witch uses in her potions). I don't think I've seen you use that food processor before...that's funny because I've used that one forever. And yes, I just discovered Heavenly and saw those fries. I think those two will pair well.

    Update on the mac and cheese: I made it early so all I need to do later is top it and bake it. But I just tasted it and I must say that it’s even better than Alton Brown’s recipe, and way easier! I used whole milk and you were right, it was actually too thick. I thinned it out with a little of the pasta water and it was just right. Thanks again for the recipe!

    I’ve started playing around with sodium citrate. The texture of soups and sauces I’ve made is sometimes a little too much like Velveeta, and it helps to use just barely enough of the citrate - but of course it’s not as easy adding extra if there’s too little as it is dissolving it in the liquid up front.

    Speaking of broccoli, check out Charred Broccoli. We use the method from Food Wishes, but it's the coolest thing to almost burn broccoli, and have it taste awesome. Very easy too. Okay, now I have to add broccoli to the shopping list for the weekend. Oh, and cheese. And chicken stock. I have the Sodium Citrate, so there's that.

    Used the liquid drained from fire roasted frozen diced hatch chiles. Oh man, best nacho cheese sauce ever, and no milk, No flour, no cornstarch. Also have used the excess juice drained from my homemade salsa or a can of Rotel. So good and no garbage ingredients whatsoever. Love this recipe. Bought the sodium citrate just for this and if that's all i ever use it for, it's worth every penny!

    Great video Steve. Good way to make a no-roux (and low carb) cheese sauce using sodium citrate. I try to measure my ingredients to get the correct consistency but sometimes miss the mark. If my cheese sauce comes out too thin I often use a few sprinkles of Xanthan Gum as an easy way to build up the sauce without having to process more cheese into the mixture.

    I made this cheese sauce today and it is spectacular and sooooo simple. I had some sharitaki with oat fiber penne and used it for mac n cheese. It was really good. Thanks!
    Next is this sauce with the french fries recipe from Heavenly Fan's video (which I had previously seen) except I'm going to shape them like home fries, with bell pepper, onion and this cheese sauce!

    Love it when you introduce a new ingredient like this. But “ have fun” is bad advice for me, as I have no sense when it comes to cooking. Would love broccoli 🥦 soup recipe!

      I used to feel the same way until I started Keto. I call it experimenting with the foods you love and just make and cook them different ways especially with several different combination of spices. Practice, play and make Roger's own creations! I always feel proud of myself when I make something so delicious and happiness is going on in my mouth. Yes, there have been a few failures to learn from too. you got this!!

    Finally got my sodium citrate from Amazon today. I'm making philly subs for the hubs and I think I will make loaded fries (from Heaven Fan) and top with the steak, cheese sauce and diced peppers.

    Steve, I love your videos. I've been watching you for a long time, but on my Kindle Fire Stick plugged into my tv, which doesn't let me comment. Anyway, I tried this sauce and at first it would not form a real cheese sauce - gloopy cheese stayed separate from the liquid. but I just added another 1/2 tsp of Sodium citrate dissolved in a little water and it turned the perfect consistency almost immediately. Got to have cauliflower Mac n cheese last night and it was great. Thanks.

    Fantastic! I see a swiss fondue in my future. Maybe a gruyere/fontina blend and a dry white wine as the liquid. Just need to order some sodium citrate now.

      I flipping love gruyere cheese sauce. I'd either go with a sauvignon blanc (if you want more "bite") or pinot grigio (if you want it "de-fanged").
