I have used this exact same Primo BBQ to cook ribs on. Made 10 racks of spare ribs cooking them 3 hours each....took them off right before they were done and finished them off over direct heat the day after. Served 15 people +/- 300 grams of pork this way. Next time I will be trying your brisket method. The result looks insane!
If you spritz the paper lightly before wrapping it won’t stick. And I couldn’t tell if you did, but make sure you rest it for a few hours in a cooler or even just a cool oven before slicing it
Could you write your recipe down for the rub (at the first)? Or do you have a weblink where I can look at it? Really enjoyed your video ... Okay, sorry, you say it around 2:00. Be nice if there was a typed list in the Description wherE I could print with Notepad.exe or a writeup / list on the video where I can just screenshot and print it with Windows Photo program. But, okay, I can type it myself.
Nice bark on your brisket. I think you put your brisket on too early. You had a lot of dirty smoke when you put it on the grill. It looks a bit overcooked but that’s a personal preference; however, most want to have a little texture or bite on their brisket and it looks like you used too much paper. (Which may contributed towards your brisket being overcooked) Maybe take two sheets and use just enough to cover the brisket…wrap them in different directions. My two cents but at the of the day if you like it it’s good. Keep grilling and it’s nice to see someone cooking on a primo.

Looks great. I'm not sure how long you rested it before unwrapping but I let mine stay in the paper until the internal temp drops down about 75c
Looks great. Much easier to slice that point if you remove it from the flat first. Butcher paper is the way to go.
Are you saying he should have removed more of the fat from the top where the crust would be better at the end?
